SHEPHERDS PIE
2lbs hamburger
1 med. onion
1 can green beans
1 can tomato soup
4 c. mashed potatoes (real or pouches)
garlic pepper, garlic salt
2 c. shredded cheddar or american cheese
2 T. butter
brown hamburger with onion, make mashed potato's, stir hamburger and onion mixture together with green beans and tomato soup
In a 2 quart casserole dish, layer hamb.mixture, then mased potatoes, top with cheese. It is already hot so just put in the oven until cheese is bubbly and golden
I tried this and it is delicious. I had forgotten about it.

Easy Cheesy Empanadas
8 oz cream cheese, softened

1 can diced green chilies

pillsbury grands biscuts
Mix the first 4 ingredients together.
Flatten the biscuts with a rolling pin. Place a spoonful of the mixture in the middle. Fold in half and crimp edges. Bake till golden. Serve with salsa.0 -

First off let me thank everyone for making me feel sooooooooooooo welcome! It is great to be a part of something so positive in such a hard time.
Second, I have some comfort food recpies that i'd like to share. I'v been a chef for the last 12 years. Now however, I am a organic gardner/farmer.
Tomato and Brie Sandwiches
8 slices of whole wheat bread
1 whole glove garlic
1 teaspoon olive oil
2 teaspoons dijon mustard (or more if you like)
4 oz Brie, thinly sliced
1 1/2 cups spinach, arrugula or other spicy greens
8 thick slices tomatoes
Brush one side of bread with oil. Cut garlic in half and rub over the oiled side. repeat with other bread slices.
Spread mustard on "inside" of bread slices. (oiled side down)
Top each mustard side with 1 oz cheese, 1/4 of the greens and 2 tomato slices. Sprinkle with salt and pepper. top with remaining bread slices, oiled side up.
Cook in a hot pan coated with spray 2-3 minutes or until cheese is melted and bread is crisp.
If you don't want to use the oil and garlic, just spread butter over outside instead.
Butter Beans with parsley, tomateos and chorizo
1 14 oz can butterbeans (keep the liquid)
1/2 pound of chorizo ( or other spicy sausage)halved and sliced 1/4 inch thick
3 tablespoons olive oil
1 tablespoon sherry vinegar (or apple cider vinegar)
1 pint cherry tomatoes, halved
1/4 red onion, thinly sliced
1/2 cup chopped parsley( or less if you like)
In a small pan, heat the beans and the liquid. In a large skillet over med hi heat, cook the chorizo until it is lightly browned, about 2-3 min. Drain the fat. Remove from heat.
Stir tomatoes, onion parsley into chorizo. Drain the beans and add to the chorizo mix. drizzle oil and vinegar over top and season with salt and pepper. Transfer to serving bowl.
enjoy with good bread and crisp salad.

I majored in Culinary Arts and worked in catering. Did everything from prep to serving. Office lunches, weddings... I haven't worked in that industry for a long time ans sometimes I really miss it.

EASY COCONUT MACAROONS
1 (16 oz.) bag coconut flakes
1 (14 oz.) can condensed milk
1 tsp. almond extract
1 (16 oz.) bag of semi sweet chocolate chips
1 cup of walnuts
Preheat oven to 350 degrees. Mix coconut flakes, condensed milk and almond extract together in a large bowl. Mix until well blended and all the milk is absorbed. Drop mixture from spoon on ungreased cookie pan. Bake 10 to 12 minutes until bottom of cookie turns light brown. Cool on rack. These cookies stay soft and chewy.
Melt chocolate chips and dip top of cooled macaroons in melted chips. If desired you can also dip the chocoate top in chopped walnuts.

I know everyone probably has this already, but, if you don't, this is good and easy! And, it is so pretty, especially at Christmas. I put it in a red glass bowl and with the green color of the pudding, it is very festive looking.
WATERGATE SALAD
1 ( NO. 2 ) CAN CRUSHED PINEAPPLE ( DO NOT DRAIN )
1 PACKAGE OF INSTANT PISTACHIO PUDDING
1 CUP MINIATURE MARSHMALLOWS
1 CUP PECANS OR CHOPPED NUTS
9 OUNCES COOL WHIP
MIX PINEAPPLE WITH PISTACHIO PUDDING AND LET DISSOLVE. ADD MARSHMALLOWS AND NUTS, THEN COOL WHIP. LET SET OVERNIGHT IN FRIG.0 -
Easy Beef Stroganoff
Here goes:
2 Tbsp. oil
2 lbs. steak cut into bite size pieces or beef stew meat
1 can cream of mushroom soup
1 can cream of onion soup
2 cans beef broth
1 cup water
2 tsps. Worchestershire sauce
1 1 lb. bag of "no yokes" noodles
1/2 cup sour cream
1. Heat oil in very large skillet and brown meat, cook until cooked through. I add my own
seasonings to the meat.
2. Add soup, beef broth, water, Worchestershire sauce and noodles. Cook over medium heat,
simmer 15 mins. or until noodles are done. Add sour cream and cook through.
I made it without the sour cream (forgot to get it at the store) and it was delicious.0 -

I bake this in the oven. I make a pocket out of aluminum foil, laying the fillets side by side. Add a quick couple of turns of extra virgin olive oil then cover the fillets lightly with salsa. Seal up the aluminum foil pouch. Cook in a 350 degree oven for about 20 to 24 minutes. Sprinkly lemon juice on fillets prior to serving. Serve with blanched broccoli crowns or a wilted spinach side and brown wild rice.
I made this the other night, and it's super! Have been trying to increase my fish intake, and the salsa plus lemon juice on this adds just the right zip! Thanks, Martha.

1/4 cup of oil and vinegar
can of tomato soup
mix sugar, oil, vinegar and soup together
cook pasta
cut up veggies
when pasta is cooked, mix everything together
