Bake at 325 degrees for 45 minutes. This cake needs no frosting. Keep refrigerated. Delicious when warmed up in the microwave. Serve with whipped topping or ice cream.

    Potato Salad
    CR,
    I add bacon bits to mine.
    Potatoes
    Eggs
    Onions
    Pickles
    mayo
    small amount of mustard
    Mix some bacon bits in
    Chill
    And right before serving add some more bacon bits to the top.

    I do not add salt and pepper--I let people add their own.

    Cabbage soup
    Ingredients
    0.6-1.0 lb boneless beef stew or sirloin cut ½ inch
    1 average size carrot
    2 medium size russet potatoes
    ½ medium onion
    1 medium round or 2 plump tomatoes
    1 medium size sweet pepper
    ½ fresh green cabbage
    1 small celery stalk
    6-8 cups of water or beef stock
    ¾ teaspoon of salt (you can add more later)
    If cooking on a regular stove, make beef broth from beef stew (or other beef meats), onion, and salt. You can also use canned broth instead. While the broth is cooking, cut your vegetables to the size and form you like. Cabbage should be cut/sliced using a special technique or shredded. Put cut potatoes and carrots into the boiling broth and cook for 10 min. Then add sweet pepper, celery, and cabbage and cook for 10-15 min. Chopped or sliced tomatoes should go last.
    If cooking in a slow cooker , add all ingredients, including beef, at the same time.

    SHEPHERDS PIE
    2lbs hamburger
    1 med. onion
    1 can green beans
    1 can tomato soup
    4 c. mashed potatoes (real or pouches)
    garlic pepper, garlic salt
    2 c. shredded cheddar or american cheese
    2 T. butter

    brown hamburger with onion, make mashed potato's, stir hamburger and onion mixture together with green beans and tomato soup

    In a 2 quart casserole dish, layer hamb.mixture, then mased potatoes, top with cheese. It is already hot so just put in the oven until cheese is bubbly and golden

    I used to can, but not much anymore. I got most of my recipes from the Ball Blue canning book but here is a favorite pickle and salsa recipe given to me by my step- mom years ago:
    Madeline's Pickles
    about 30 medium pickling cucumbers.
    8 cups of sugar
    2 tblsp.pickling spices
    5 tsp. pickling salt
    4 cups cider vinegar

    1st- cover whole cucumbers with boiling salt water for 3 days.
    change water everday.

    2nd.- Drain on 4th day.
    Slice cucs into 1/2 in. or so cubes.

    Combine spices,sugar,vinegar and bring to a boil. Pour over the cucs and let sit overnight.

    The next day bring to a boil again and pack and process for 30 minutes in boiling water bath.


    Salsa
    4 cups,peeled cored and chopped tomatoes
    2 cups seeded,chopped long green peppers
    1 cup seeded,chopped hot peppers
    3/4 cup chopped onion
    1 1/2 tsp. salt
    2 cloves chopped garlic
    1 1/2 cups cider vinegar

    Combine tomatoes, peppers,onions salt,garlic and vinegar in a large pot. Bring to a boil. Reduce heat and simmer 20 minutes. Pour into hot, sterile jars. Process 30 minutes in boiling water bath. Makes about 6 pints.

    This is excellent salsa. It taste much better than store bought!!

    Only about 1/2 to 3/4 of the mayo you'd normaly use
    Bacon bits
    thousand island dressing to take up the slack in mayo

    May need to play around with it to suit tasts though.

    And I'f I'm in the mood I may add baby shrimp.

    ADD THE FOLLOWING INGREDIENTS TO A STEW POT: WATER, TOMATOE SAUCE, STEWED TOMATOES, PEELED AND QUARTERED POTATOES, QUARTERED ONION, CARROTS AND WATER, ADD SALT TO TASTE. COOK ON MEDIUM HEAT FOR 30 MINUTES THEN ADD MEATBALLS AND SIMMER ON A LOW HEAT FOR TEN ADDITIONAL MINUTES. ADD ADDITIONAL WATER IF DESIRED. TO THICKEN STEW MIX 2 TBLSP FLOUR IN A CUP OF WATER AND WHIP TO A THICK SAUCE FREE OF LUMPS AND ADD TO STEW WHILE IT IS COOKING.

    RE, I use Louisanne Brand tea bags, use 3 family size bags per 1 gallon of tea. I love my tea really sweet, so I use 2 cups of sugar. 1 1/2 cups may do you though. Add enough cold water and ice to make a gallon. Pour over ice (I love a lot of ice), and enjoy!
