    Ingredients
    4 chicken breasts

    1 (8 ounce) can cream of chicken soup


    1 (8 ounce) can cream of mushroom soup


    1 (8 ounce) can rotel, original
    8 ounces Velveeta cheese, cubed


    1 (19 ounce) bag nacho cheese flavor Doritos

    Directions
    1Boil the chicken until done.
    2Mix together in a large mixing bowl the 2 cans of soup and Rotel.
    3Chop up finished chicken and mix it in with the soup/Rotel mix.
    4Crush bag of Doritos.
    5Save 2 cups of crushed chips to cover the top of the dish with.
    6Mix remaining chips into soup mixture.
    7Place in 13x9 baking dish covering with chips and bake for 30 min at 350, or until chips have begun to turn brownish.

    We loved Margo's grilledchicken salad
    I made for supper tonight and was surprised at how much it made, and how delicious it was. Thanks Margo, it was a big hit in my household. I will post one tomorrow, right now i'm so full and happy i think i will just totter off to bed haha.

    A traditional carrot cake made lighter.


    Ingredients

    1/2 cup chopped hazelnuts
    3 Eggs, large, raw (or 3/4 cup egg substitute)
    1/2 cup light olive oil (or canola oil)
    1/2 cup sugar
    1 cup Pineapple, crushed, with juice, canned
    1 cup whole wheat flour
    1 cup white all purpose flour
    1 tsp low sodium baking powder
    2 tsp baking soda
    1 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1 tsp vanilla extract
    3 cup grated carrots
    1/2 cup seedless raisins

    Directions


    1 Preheat oven to 350 degrees F.
    2 If using nuts, place on baking sheet and bake 3 to 5 minutes until toasted. Set aside.
    3 Spray a 13 x 9 x 2 inch baking pan with cooking spray.
    4 In a large bowl, using an electric mixer at medium speed, beat eggs until frothy.
    5 Beat in oil and sugar at medium speed until well blended scraping sides of bowl.
    6 Add crushed pineapple with juice, flours, baking powder, baking soda, spices, and vanilla and beat at low speed until well blended.
    7 Use a rubber spatula to stir in carrots and nuts and raisins, if using.
    8 Spread batter into prepared pan and bake 30 to 35 minutes or until wooden pick inserted in center comes out clean.
    9 Cool completely, about 1 hour, on wire rack.
    10 Run a knife around sides of cake to loosen from pan.
    11 Invert onto rack and place right side up on serving plate.
    12 Sprinkle with confectioners' sugar or frost with Light Cream Cheese Frosting

    THOUGHT I WOULD REPOST THIS ONE FOR NEW FOLKS
    CHOCOLATE CAKE FOR ONE

    1 Coffee Mug
    4 tablespoons flour(that's plain flour, not self-rising)
    4 tablespoons sugar
    2 tablespoons baking cocoa
    1 egg
    3 tablespoons milk
    3 tablespoons oil
    3 tablespoons chocolate chips (optional)
    Small splash of vanilla

    Add dry ingredients to mug, and mix well . Add the egg and mix thoroughly.
    Pour in the milk and oil and mix well.
    Add the chocolate chips (if using) and vanilla, and mix again.
    Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed.
    Allow to cool a little, and enjoy....!

    If I'm not mistaken,rotel is canned tomatoes.I think that's the brand name.

    Susie you are exactly right, the only reason I know this is that I call paper towels "roll towels" and it always confuses the dickens out of my brother in-law who uses ROTEL regularly. He finally presented me with a can of it and explained why he is alway confused when I ask for Roll Towel. It is actually spicey tomato sauce made for use in hispanic dishes.

    I have one
    Guppy Pasta!

    Take a load of Guppies, fry them in extra virgin with garlic, add tomato paste and cooked pasta shells, big pinch of Italian herbs, stir and add a cup of frozen peas......salt and pepper to taste!

    Actually, works better with canned tuna in oil.

    4 oz Grey Goose Vodka I dare say you can figure out how to put this together
    2 oz Tonic Water
    Lime slice


    Put some nice music on,
    Serve with your favorite chips and dip ( what? You need a recipe for that too????)

    For those who don't like vodka, substitute Gin
    And for the Healthy and Aware among us, add a splash of Cranberry juice to the above-mentioned "recipe"!!!

    Yeah, yeah, I really can cook, and love to~ it's just with the triple digit temps here lately, Vodka/Tonic sounded good! And it might make someone laugh, too. I will post a coupla REAL recipes soon, I promise!!!

    Chicken Thingy
    This is not a homemade recipe, I got it from the box of stovetop and everyone I serve it to loves it:

    In a baking dish (size depends on how much chicken you use),
    dice up as many chicken breasts (no bone) as you want, usually enough to fill the bottom of the pan in one layer.
    Open a box of stove top chicken (or turkey) stuffing mix and make according to the directions, except you can just use hot water and not boiling.
    The recipe calls for a can of mushroom soup, but we like a can of chicken or turkey gravey, mixed with a little bit of half and half or milk, enough to cover the chicken pieces pretty good.
    Sprinkle the stuffing on top of the gravy and finish off with a bunch of pats of butter.
    Bake at 350 degrees or until bubbling and chicken is cooked through.
    Plop a dollop of cranberry sauce on the side, and you've got a good quick delicious dinner.

    Wait till I find my recipe for dump cake. YUMMO

    onion soup chicken
    1 whole chicken (cut into parts)
    1 packed of lipton onion soup
    1/4 cup of a1 sauce
    1/2 onion cut in to rings
    1 green pepper sliced in rings
    1/2 a cup of water

    in baking dish combind every thing, cover with foil, and bake at 350 for and hour and a half.
    we serve it with yellow rice and beans but will go with anything

Gently stuff the mixture into the uncooked noodles and place in a baking dish. Pour the spagetti sauce over the stuffed noodles and bake for 45 minutes on 375.

    (if desired you can sprinkle cheese of your choice over the top once cooked).

    ALSO COOKS WELL IN A CROCK POT ON MED HIGH FOR 4 HOURS.

    Pour into 2 quart casserole dish.
    Peel biscuits in half and lay across top.
    Sprinkle with cheese.

    This is great when you have company. I make this a lot when we are at our cabin if we have friends and family staying with us.
