EASY COCONUT MACAROONS
1 (16 oz.) bag coconut flakes
1 (14 oz.) can condensed milk
1 tsp. almond extract
1 (16 oz.) bag of semi sweet chocolate chips
1 cup of walnuts
Preheat oven to 350 degrees. Mix coconut flakes, condensed milk and almond extract together in a large bowl. Mix until well blended and all the milk is absorbed. Drop mixture from spoon on ungreased cookie pan. Bake 10 to 12 minutes until bottom of cookie turns light brown. Cool on rack. These cookies stay soft and chewy.
Melt chocolate chips and dip top of cooled macaroons in melted chips. If desired you can also dip the chocoate top in chopped walnuts.

And right before serving add some more bacon bits to the top.
I do not add salt and pepper--I let people add their own.
I made this potato salad and it was great!! And I was able to substitute low fat mayo & turkey bacon, because of hubby's diet. It was still great...lol!!

Oriental Cole Slaw.....
This is a great recipe for picnics and gatherings. It has a sweet and sour taste that people love. Whenever I take it anywhere, someone wants the recipe. Made it for my daughter's wedding shower and it was a great hit and it is so easy!!
1/2 cup sugar
1/2 cup vegetable oil
1/4 cup apple cider vinegar
1 pkg. chicken ramon noodles with flavor packet
1 tsp. salt
1 tsp. pepper
1 bag of cole slaw
1/2 cup roasted almonds or sunflower kernels
Mix all liquid and spices together, crush ramon noodles and add to slaw. Pour liguid over it and refrigerate for an hour. Enjoy!!

Hamburger Soup
I am a soup maker and this is my easiest, best recipe. It's a good hardy soup and my fiance says it is "the bestest"!!
2 lbs. ground beef
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. oregano
1 tsp. basil
1 (2 ounce pkg.) of onion soup mix. You use both envelopes in the box.
6 cups boiling water
2 - 8 oz. cans tomato sauce
1 tbsp. soy sauce
1 can mixed vegetables
1 cup elbow macaroni
1. Brown meat, drain and rinse.
2. Add all spices plus onion soup mix
3. Stir in water, tomato sauce and soy sauce
4. Cover and simmer 15 mins.
5. Add vegetables, cook 30 mins.
6. Add macaroni and cook 30 mins more.
Add water or more tomato sauce (to taste)if necessary.

Prep Time: 10 min
Total Time: 40 min
Makes: 6 servings
1 pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
1/2 cup cold butter
5 cups frozen sliced peaches, thawed and drained, or 1 can (29 oz) sliced peaches, drained
1. Heat oven to 375°F. In large bowl, place cookie mix. Cut in butter, using pastry blender or fork, until mixture looks like coarse crumbs.
2. In ungreased 8-inch square baking dish or 2-quart round casserole, place peaches. Sprinkle cookie mixture over peaches.

Reserving 1 1/2 cups crumb mixture, press remainder on bottom of greased 13x9-inch baking pan.
In medium bowl, beat EAGLE BRAND® with peanut butter until smooth; spread over prepared crust.
Sprinkle with reserved crumb mixture. Bake 25 to 30 minutes or until set. Cool. Cut into bars. Store loosely covered at room temperature.0 -

ZUCCHINI CHOCOLATE CAKE
1/2 cup margarine
1/2 cup vegetable oil
1 3/4 cup sugar
2 eggs
1 tsp. vanilla
1/2 cup sour milk ( add 1 tsp. vinegar to milk to make sour)
1 cup milk
2 cup grated zucchini
2 1/2 cup flour
1/2 tsp.baking powder
1/2 tsp. salt
4 tbsp. baking cocoa
1 tsp.baking soda
1/4 cup chocolate chips
Cream margarine, oil and sugar. Add eggs,vanilla and milk. Beat well. Add zucchini and mix. Add dry ingredients. Pour into a greased and floured 9x13 inch pan and sprinkle with chocolate chips. Bake at 325 degrees for 45 minutes. This cake needs no frosting. Keep refrigerated. Delicious when warmed up in the microwave. Serve with whipped topping or ice cream.0 -

2 cups Boiling Water
2 pkgs. cherry jello
4 cups ice cubes
3 cups thawed cool whip
1 can cherry pie filling
Mix jello with boiling water until dissolved. Add ice cubes until thick. Take out any undissoved cubes. Fold in Cool Whip util blended. Fold in the cherry pie filling. Spoon into bowl and chill. About 20 minutes.0 -

ADD THE FOLLOWING INGREDIENTS TO A STEW POT: WATER, TOMATOE SAUCE, STEWED TOMATOES, PEELED AND QUARTERED POTATOES, QUARTERED ONION, CARROTS AND WATER, ADD SALT TO TASTE. COOK ON MEDIUM HEAT FOR 30 MINUTES THEN ADD MEATBALLS AND SIMMER ON A LOW HEAT FOR TEN ADDITIONAL MINUTES. ADD ADDITIONAL WATER IF DESIRED. TO THICKEN STEW MIX 2 TBLSP FLOUR IN A CUP OF WATER AND WHIP TO A THICK SAUCE FREE OF LUMPS AND ADD TO STEW WHILE IT IS COOKING.

SHEPHERDS PIE
2lbs hamburger
1 med. onion
1 can green beans
1 can tomato soup
4 c. mashed potatoes (real or pouches)
garlic pepper, garlic salt
2 c. shredded cheddar or american cheese
2 T. butter
brown hamburger with onion, make mashed potato's, stir hamburger and onion mixture together with green beans and tomato soup
In a 2 quart casserole dish, layer hamb.mixture, then mased potatoes, top with cheese. It is already hot so just put in the oven until cheese is bubbly and golden0 -
