LET'S SHARE RECIPES!
suggested that we start a thread for any or all of us to add a recipe. Since Margo is our
designated joke lady now, maybe, she would like to start the thread with another recipe?
Perhaps, your potato salad? Then, you could be the food lady too!
Ok ladies, it is out there. Don't everyone start throwing them out at once. lol

Tilapia is a mild white fish that works well with a side of a ton of fresh greens. My husband does not like fish but my two teen-age daughters love this recipe.
4 tilapia fillets (each about the size of your palm - totals about a pound)
Mild salsa (I use Safeway's organic, it's perfect)
Olive oil
Lemon juice
I bake this in the oven. I make a pocket out of aluminum foil, laying the fillets side by side. Add a quick couple of turns of extra virgin olive oil then cover the fillets lightly with salsa. Seal up the aluminum foil pouch. Cook in a 350 degree oven for about 20 to 24 minutes. Sprinkly lemon juice on fillets prior to serving. Serve with blanched broccoli crowns or a wilted spinach side and brown wild rice.0 -

Thanks, Susie!
I buy my garlic pepper at Smart and Final for about $6.00, if I don't have that on hand then I use "Pappy's choice Garlic Herb" which is similar. If you cannot find either of these I would use a combined garlic salt and pepper mixture 2/3 garlic salt 1/3 pepper.
Garlic pepper has GARLIC, SALT, BLACK PEPPER, PARSLEY AND DRIED BELL PEPPERS in it so it is a great seasoning. I like the Tradewinds brand. We use it all the time, it is great on red meat, pork, chicken most everything.
Hope this helps, I am pretty sure you will enjoy this dish it is a family favorite in our household.
Enjoy!

SHRIMP TOMATO PESTO PASTA PREP TIME 20 MIN.
SHRIMP TOMATO PESTO (APPROX. 20 MINUTES START TO FINISH)
1 MEDIUM PACKAGE EGG NOODLES (THE FAT NOODLES WORK BEST)
1 TSP OF CRUSHED GARLIC
1 PKG OF SLICED MUSHROOMS
1 7 0Z. PKG. OF SUN DRIED TOMATO PESTO
1 12 OZ. PKG. OF MEDIUM SIZED FROZEN SHRIMP
1 TBLSP. OLIVE OIL
BOIL THE NOODLES FOR TEN MINUTES STIRRING PERIODICALLY SO THE DO NOT STICK TOGETHER.
I A PAN LIGHTLY SEAR THE SHRIMP IN 1 TBLSP. OF OLIVE OIL AND 1 TBLSP OF CRUSHED GARLIC FOR APPROX. 3 MIN. THEN ADD THE MUSHROOMS AND THE PESTO STIRRING FREQUENTLY. ONCE THE PESTO SAUCE IS COMPLETELY MIXED IN REMOVE FROM HEAT AND SET ASIDE.
REMOVE THE NOODLES FROM THE WATER AND RINSE WITH ROOM TEMPERATURE WATER THEN DRAIN. COMBINE THE NOODLES AND THE SHRIMP MIXURE, SERVE WITHE A SALAD AND/OR FRENCH BREAD.
YOU CAN ALSO DO THE SAME USING CHICKEN INSTEAD OF SHRIMP. SOMETIMES WE REPLACE THE MUSHROOMS WITH ASPARAGUS OR BELL PEPPERS. ANOTHER RENDITION IS TO USE REGULAR GREEN PESTO INSTEAD OF TOMATO PESTO, THEY ARE ALL YUMMY!0 -
