Cyber Cookie recipe exchange
So, with the expectation of Christmas, please share your FAVORITE cookie recipe.
I make this one every year. It's called different things but I like to call it a Butter Crescent. My Mom used to make these when I was little. They melt in your mouth!
Preheat oven to 325
Here's the super easy recipe, mix in this order:
Cream 2 sticks of butter
Blend in 3/4 cup of Confectioner's sugar
1 teaspoon of vanilla
1/8 teaspoon salt
2 cups of flour
1 tablespoon of ice water (mix into a soft dough)
2 cups of chopped pecans
flour your hands and form them into a crescent the size of your ring finger
Bake on greased cookie sheet for 15-20 minutes or until firm but not brown
Immediately roll in confectioner's sugar while warm, then again when cooled.
Enjoy!!

Almond Graham Cracker Bars
I love this idea and I love Christmas cookies too!
Use jelly roll pan and spry with Pam.
Use 12 graham crackers to line pan.
Sprinkle 6 oz. sliced almonds over them.
Boil 2 sticks of butter and 1 cup of brown sugar for 1 minute.
Pour over crackers.
Bake 10 minutes at 350 degrees.
Cool, cut, & enjoy!

RICH CHOCOLATE CHIP COOKIES
5 CUPS OATMEAL
4 CUPS FLOUR
CREAM TOGETHER:
2 CUPS BUTTER
2 CUPS WHITE SUGAR
2 CUPS BROWN SUGAR
ADD:
4 EGGS
2 TSP. VANILLA
1 TSP SALT
2 TSP BAKING POWDER
2 TSP BAKING SODA
PUT SMALL AMOUNTS OF OATMEAL IN BLENDER TILL IT TURNS TO A POWDER, DO THIS WITH ALL OF THE OATMEAL.
MIX ALL INGREDIENTS TOGETHER AND ADD 24 OZ. BAG OF CHOC. CHIPS, ONE 8 OZ. HERSHEY BAR (GRATED) AND/OR 3 CUPS OF WALNUTS.
ROLL INTO GOLF BALL SIZED COOKIES, PLACE 2 INCHES APART ON UNGREASED COOKIE SHEET AND BAKE AT 375 FOR 15 MINUTES. THIS RECIPE WILL MAKE ABOUT 112 COOKIES.0 -
Peanut Butter Fudge
Peanut Butter Fudge
1- box powdered sugar
1- box light brown sugar
1- Small can of cream
1- tsp vanilla
1- jar marshmallow crème
1- 12 oz jar of chunky peanut butter
Grease a 13 x 9 cake pan.
In a heavy 3 qt sauce pan, combine sugars and cream.
Heat over med high heat until the mixture begins to bubble. (stir to prevent scorching)
Reduce heat to medium.
Stir constantly and let the mixture boil for 5 minutes.
Remove from the heat and add vanilla, marshmallow crème and peanut butter.
Stir until all ingredients are completely combined.
Pour into 13 x 9 pan and allow to cool some before cutting in squares.

pecan tassies
these were my dad's favorite christmas cookies! i couldn't bring myself to bake them for several years after he died. now it still makes me sad, but i smile when i remember how much he enjoyed them.
for the dough. . .
1/2 cup butter
1/2 of an 8oz. cream cheese
1 cup flour
let butter and cream cheese soften to room temperature. mix together. add flour and mix to form a soft dough. chill at least an hour (or overnight). form the dough in 30 walnut sized balls. place each ball of dough into a mini-muffin cup. press dough to form a little tart shell (i have a wooden tart shaper, but you can do it by hand too)
for the filling. . .
2 tablespoons melted butter
3/4 cup brown sugar
1 egg
1-1/2 cups of chopped pecans
1 teaspoon of vanilla
mix all the ingredients until well blended. fill each unbaked tart shell. bake in 350 oven for 15 to 20 minutes. dust tops with powdered sugar when cool.

2 eggs
Mix oil and eggs into dry cake mix. Drop by teaspoonfuls onto ungreased cookie sheet. 350 degrees, 8-10 minutes.
we take lemon icing and make a sandwich -- yum yum yum
the kids like the Funfetti cake mix with vanilla icing
chocolate is delish with creamcheese icing
we tried carrot cake and it wasnt very good - and I love carrot cake!!!!
tried red velvet last christmas and it was not to good either

5 Minute Fudge Wreath
I don't have sweet tooth and rarely eat cakes, candy, cookies...but Reggie will bake at a moments notice! So, I don't have any special cookie recipes, but I have a quick fudge recipe! One bite and your teeth will rot in your head~ LOL Which means a little goes a long, long way! And, it's holiday pretty, too!!!
1 (12 0z) bag of semi-sweet chocolate chips
9 oz butterscotch chips
1 (14 oz) can of Sweetened, Condensed Milk
1 tsp vanilla extract
8 oz walnut halves
2 handfuls of craisins or currants, optional
Lightly grease an 8" cake pan with softened butter
Place a heavy pot on the stove and pre-heat it over low heat. Add both varietes of chip and the sweetened condensed milk and stir until it melts. SAVE THE EMPTY MILK CAN!
Stir in vanilla and remove from the heat. Gently add nuts and craisins and stir in immediately!
Wrap the empty milk can with saran wrap and center it in the middle of the buttered cake pan. Spoon the hot fudge mix into the cake pan and make sure it is evenly distributed.
This fudge will set up almost INSTANTLY! Chill in the fridge...it is extremely sweet and rich, so serve in tiny, thin slices. Again, a little of this goes a long long way!

1/2 c. creamy peanut butter
3 c. Chinese noodles (chowmein)
melt chips in double boiler (or at 30 sec intervals in microwave)
add peanut butter and stir
add chowmein noodles and stir
drop by spoonfuls on waxed paper, let "dry" or harden.0 -

4 eggs

4 squares unsweetened chocolate
2 C Sugar
2 & 1/2 C Flour (+ a little more to make dough less sticky but not stiff)
2 Tsp Baking powder
2 oz Amaretto (substitute: almond extract or 1 oz of each)
1/2 C finely chopped almonds (can leave out with no problem)
Confectioners sugar
Melt butter and chocolate, add to mixed dry ingredients. Add eggs & amaretto, and almonds. Refridgerate 3 hours. Shape into marble sized balls, roll in Confectioners sugar. Bake on lightly greased pan.
Soft, chewy, melt in your mouth.
I can't wait to try your cookies, I hope you like mine!
