    Molasses Spice Cookies
    Yummy!

    1 C granulated sugar
    3/4 C shortening
    1/4 cup molasses
    1 large egg, beaten
    2 C flour
    2 tsp baking soda
    1 tsp cinnamon
    1 tsp ground cloves
    1 tsp ground ginger
    1/4 tsp dry mustard
    1/4 tsp salt
    1/2 C granulated dark brown sugar

    Preheat oven to 375. Grease cookie sheets. Beat white sugar and shortening 5 minutes until light and fluffy. Add molasses and egg; beat until fluffy. Combine flour, soda, cinnamon, cloves, ginger, mustard and salt in medium bowl. Add to shortening mixture & mix til combined. Place brown sugar in shallow dish. Roll tablespoons of dough into 1 inch balls and roll in sugar to coat. Place 2 inches apart on cookie sheet. Bake 10-15 min (until lightly browned).

    Peanut Butter Fudge
    Peanut Butter Fudge
    1- box powdered sugar
    1- box light brown sugar
    1- Small can of cream
    1- tsp vanilla
    1- jar marshmallow crème
    1- 12 oz jar of chunky peanut butter
    Grease a 13 x 9 cake pan.
    In a heavy 3 qt sauce pan, combine sugars and cream.
    Heat over med high heat until the mixture begins to bubble. (stir to prevent scorching)
    Reduce heat to medium.
    Stir constantly and let the mixture boil for 5 minutes.
    Remove from the heat and add vanilla, marshmallow crème and peanut butter.
    Stir until all ingredients are completely combined.
    Pour into 13 x 9 pan and allow to cool some before cutting in squares.

    Cake Box Cookies YUMMM
    1 box cake mix (any flavor) lemon is our favorite!!!
    1/2 c. vegetable oil
    2 eggs

    Mix oil and eggs into dry cake mix. Drop by teaspoonfuls onto ungreased cookie sheet. 350 degrees, 8-10 minutes.

    we take lemon icing and make a sandwich -- yum yum yum

    the kids like the Funfetti cake mix with vanilla icing

    chocolate is delish with creamcheese icing

    we tried carrot cake and it wasnt very good - and I love carrot cake!!!!

    tried red velvet last christmas and it was not to good either :(

    Anyway they are super easy and VERY good esp the lemon w/icing!!!!!

    let butter and cream cheese soften to room temperature. mix together. add flour and mix to form a soft dough. chill at least an hour (or overnight). form the dough in 30 walnut sized balls. place each ball of dough into a mini-muffin cup. press dough to form a little tart shell (i have a wooden tart shaper, but you can do it by hand too)

    for the filling. . .

    2 tablespoons melted butter
    3/4 cup brown sugar
    1 egg
    1-1/2 cups of chopped pecans
    1 teaspoon of vanilla

    mix all the ingredients until well blended. fill each unbaked tart shell. bake in 350 oven for 15 to 20 minutes. dust tops with powdered sugar when cool.
