Potato Salad & French Suarkraut
Potato Salad
5 lbs red potatoes - cut in whatever size you like them.
Red and green bell peppers, red onion, and dill pickles (not dill relish) cut in small pieces (1/4"). Probably about a cup of each but amount to your taste.
1 cup (approx) each of mayonaise and sour cream (again to your taste and sometimes it'll need more than other times), 'glop' of Dijon mustard, a dab of dill pickle juice, Lawrey's garlic salt.
While cutting everything, brown 1 lb. 1/4" thick sliced sausage (I usually use Kielbasa but again it's to your taste). Drain them and pat with paper towel to remove any excess 'fat' off them.
Then just mix together and enjoy.
French Saurkraut
A jar, bag, or lg. can of saurkraut
Drain and put in a pot with water - boil. After it comes to a boil drain it and repeat 4 - 6 times. The point of this is to remove the saur.
While boiling - Cut up several onions and slice a fair bit of fresh garlic. Brown these in butter. Then brown pork chops, a pork roast with garlic cut into it or sausage (Kielbasa/etc.) browned.
When de-sauring is done add the kraut to the onion/garlic saute. Place the meat in the skillet (I usually use electric skillet but can put in a cast iron skillet and cook on stove top or oven or casserole pan in oven). Add kraut mixture and cook slow til meat is done. Salt/pepper to taste.
(This is a French dish - not one someone just wants to call French. I learned how to make it from our French maid when we lived in France.)
Sorry I'm not good at giving exact amounts for almost eveyhing I cook - that's not how I was taught to cook. If anyone is interested in either and needs a bit more explaination - I'll be happy to try.0 -
G'ma's Banana Bread--yummy
OK, this one is top secret, so don't tell anyone ;-) Everyone at work loves when I bring it. I serve it with extra butter or margerine, so that we can all really be "Buttertons."
My Grandmother's Banana Bread
1/2 cup butter
1 cup white sugar
2 eggs
2 large mashed bananas
1/3 cup sour cream
Pinch of salt
2 cups sifted flour
1 tsp baking soda
Brown sugar
Cream butter and sugar; add eggs and bananas. Stir in sour cream. Sift together salt, flour and soda. Stir into batter; pour in greased and floured loaf pan. Sprinkle top with brown sugar. Bake at 325 for 1 hour.
You can throw in some chopped walnuts, if you like. My hubbie hates nuts so I usually leave them out.0 -

LEMON ZEST DRESSING
1 large lemon - zest the whole lemon, split down middle and squeeze all juices.
1/3 cup sugar
2 tablespoons White Wine Vinegar
1 tablespoon Olive Oil
1 teaspoon poppy seeds
Mix thoroughly until sugar completely dissolves. Refrigerate until serving time.
You can make this your main meal by adding either broiled shrimp or broiled chicken breast. However, my favorite way is just salad.

1 1/2 cups chopped walnuts or pecans – optional

• Mix together 1 1/2 cups sugar and the cinnamon; set aside (this will be used later to spread on dough)
• In a small bowl, dissolve yeast and 1 tsp. sugar in warm water; set aside (if using instant yeast, you can skip this step)
• In a large bowl, mix together milk, 2/3 cup sugar, 2/3 cup melted butter, salt, and eggs; add yeast mixture and 4 cups of flour to mixture; beat until smooth; stir in enough flour to form a slightly stiff dough.
• Turn dough out onto a well-floured surface and knead for 8 minutes. I always know when my dough is finished kneading (either by hand or machine) when it can stretch quite well. It must be elastic enough.
• Place dough into a large greased bowl, cover, and allow to rise in a warm place until doubled in size, about 1 – 1 1/2 hours.
• Punch down dough and let rest for 5 minutes.
• Roll dough out onto a floured surface into a 15″ X 20″ rectangle.
• Brush 1/2 cup melted butter over dough; sprinkle cinnamon sugar evenly over dough; sprinkle nuts evenly over dough, if desired.
• Tightly roll up dough and pinch edges together to seal; cut the roll into 12 – 15 slices using dental floss or thread.
• Coat the bottom of a 13″ X 9″ X 2″ baking pan with 1/2 cup melted butter; sprinkle 1/3 cup sugar evenly in the bottom of the pan. Place cinnamon roll slices close together in the prepared pan; cover pan and allow to rise in a warm place for about 45 minutes or just eye ball them.
• Bake rolls in a 350 degree oven for 25 – 30 minutes, or until golden brown.
Cinnabon like Frosting
• 8 oz. cream cheese
• 8 ounces margarine
• 1 tsp. vanilla ( I love using almond extract for variety)
• 1/2 tsp lemon
• 16 oz. powdered sugar
Beat together, margarine, sugar, and vanilla. Spread frosting on warm rolls and eat until you are stuffed.

1 CAN CREAM OF CHICKEN SOUP
1 CUP MILK
1 SMALL BOX OF TATER TOTS
1 SMALL ONION, CHOPPED
1 CAN GREEN BEANS, DRAINED
Brown hamburger and onion. Place in bottom of 2 quart casserole. Top with green beans. Cover with a layer of tater tots. Mix soup and milk; pour over all. Bake at 350 for 1 hour. Top should be golden brown.0 -

In medium bowl, mix the flour, baking soda, baking powder, cinnamon, & salt. Blend into the egg & pumpkin mixture. Fold in chocolate chips. Transfer to muffin pans.
Bake in preheated oven 15 to 20 minutes. Remove from pan & cool on wire rack.
I'm not a huge fan of pumpkin, but these are always a HUGE HIT!!! Very good warm.
A really good recipe tinabug for this time of year. Anything pumpkin is good!

8 cans crushed tomatoes
3 lbs lasagna
1 lb. hot sausage
2 3lbs. ricotta cheese

grated cheese
6 eggs
1 tbp sugar
take sausage out of casing and brown it, same for chop meat brown and drain
in big mixing bowl mix together ricotta, mozzarella,eggs, grated cheese, parsley,sugar
make your sauce as usual
now cook lasagna noodles half way
lay out noodles in pan and start layering,sauce, ricotta,chopmeat, sausage and so on cook 1hour and the trick is let it settle before eating
cook 375 degrees

Easy cobbler
I came up with this when looking for a way to spend less time in the kitchen but still provide good food for my daughter. Hope you enjoy as much as we have. I use blueberry, but I'd imagine it would work with anything filling you like
1 package sugar cookie dough
1 can of blueberry filling
Coat a 9x9 in pan with no-stick spray. Use 3/4 of the cookie dough to line the bottom of the pan, pressing in place. Pour can of blueberry pie filling into the pan. Crumble remaining cookie dough on top. Bake at 320 for about 25 minutes, until the top turns golden brown.

MIX PINEAPPLE WITH PISTACHIO PUDDING AND LET DISSOLVE. ADD MARSHMALLOWS AND NUTS, THEN COOL WHIP. LET SET OVERNIGHT IN FRIG.
