    Fiery Moroccan Chicken Stew
    my boyfriend begs me to make this. it takes awhile, but so worth it!!! (my tip? buy the pre cut butternut squash, it takes so long to peel and cut them!) delicious :)

    2 tablespoons olive or canola oil
    3 skinless, boneless chicken breasts, diced into 1-inch cubes
    1 red onion, finely chopped
    3 cloves garlic, finely chopped
    2 teaspoons fresh ginger, finely chopped
    ½ teaspoon ground turmeric
    2 teaspoons ground cumin
    ¼ teaspoon cayenne (1/8 if you prefer only a mild kick)
    3 tomatoes, diced
    1 13-ounce can of chickpeas, drained and rinsed
    ½ cup raisins or dried currants
    1 cup water
    ½ medium butternut squash, peeled, seeded, and cut into cubes
    1 red bell pepper, cut into 1-inch pieces
    ¼ cup raw cashews

    Directions

    Heat 1 tablespoon of oil in a large skillet over medium heat. Cook chicken for 5 to 7 minutes, until no longer pink inside. Turn off heat and cover.
    Heat remaining 1 tablespoon oil in a large saucepan over low to medium heat. Add onion and sauté until translucent. Add garlic, ginger, turmeric, cumin, and cayenne. Cook for 30 seconds.
    Add tomatoes, chickpeas, raisins, water, squash, red pepper, and chicken to saucepan and bring to a boil. Reduce heat and simmer for 40 minutes.
    When ready to serve, place stew in bowls and top with cashews.

    Easy Chesseburger Pie
    Made this for dinner tonight.

    1 lb. ground meat (I use ground turkey)
    1 Onion - diced
    1 cup milk
    2 eggs
    1/2 cup Bisquick
    1 cup shredded chedar cheese

    Brown meat and onion in fry pan and drain
    Spray pie pan with non-stick spray
    Add meat to pie pan
    Cover with cheese
    Mix milk, eggs and Bisquick with wisk
    Pour mixture on top
    Bake at 400 degrees for 25 minutes until top is browned

    2.c. bisquick
    2.c. sharp cheddar cheese, shredded


    combine all ingredients,roll into balls[makes about 50]
    bake at 350 for 15 minutes turn over and bake another 15 minutes

    freezes well can be made ahead of time.

    Hearty Italian Soup
    1 Italian sausage link, cut into 1/2" pieces
    1 small onion, chopped
    1/2 green pepper, chopped
    1 can Italian diced tomatoes, with juice
    1 1/2 cup water
    1 can tomato sauce
    1 tsp. sugar
    1 tsp. chicken bouillon granules
    1/4 tsp. garlic powder
    1/3 uncooked elbow macaroni
    2 cups shredded mozzarella cheese

    In skillet, cook sausage, onion and green pepper until sausage is browned. Drain. Stir in tomato sauce, bouillon and garlic powder. Bring to a boil; reduce heat, cover and simmer for 15 minutes, stirring occasionally. Stir in macaroni, cover, and simmer 10 - 15 minutes until the macaroni is tender. Sprinkle with the cheese. Yields 4 cups.

    This freezes well too!

    Beef Taco Bake
    1 pound ground beef
    1 can tomato soup
    1 cup salsa
    1/2 cup milk
    6 flour tortillas, or 8 corn tortillas, 6-8", cut into 1" pieces
    1 cup shredded cheddar cheese

    In skillet, cook beef; drain well. Add soup, salsa, milk, tortillas and half of the shredded cheese into the skillet with beef. Mix together and spoon into a 2 quart baking dish. Cover and bake for 30 minutes at 400 degrees. Sprinkle with remaining cheese.

    I've cooked a lot of game but never antelope. One of Hubby's friends is giving him a bunch of antelope so any recipes.

    I'm thinking it'll be
    I'm thinking it'll be similar to either venison or elk (usually much 'gameyer') but thought couldn't hurt to ask if someone's used any. Might make a difference where it was taken - usually the venison off the prairie is not as gamey as those out of the Hills - different graze.

    I'm not a huge fan of pumpkin, but these are always a HUGE HIT!!! Very good warm.

    Cherry Salad - Very Easy
    1 can crushed pineapple, drained
    1 can cherry pie filling
    1 can condensed milk
    1 container cool whip

    Drain pineapple well. In a large bowl mix pineapple, cherry pie filling, Cool Whip and condensed milk, folding together gently. Chill and serve!

    1 tablespoon Worcestershire sauce
    1 small bottle ketchup
    1 package of spaghetti, cooked and drained
    Parmesan cheese and onions for serving garnishes

    Brown ground beef and onions. Drain. Add chili seasoning, Worcestershire sauce and ketchup and heat through. Serve over spaghetti. Top with Parmesan cheese and onions.

    Chicken Cutlets
    Boneless chicken breast Slice very thin
    Progresso Italian bread crumbs
    Grated Pecorino Romano cheese
    eggs

    After slicing chicken very thin, beat eggs and coat the chicken.
    then on a paper plate mix bread crumbs with cheese. No measuring but add a lot of cheese.

    Fry in very hot oil turning quickly because they are thin and will cook fast.

    Drain on a paper towel and continue with layers of towels in between so they're not greasy.

    P.S. Use a lot of oil because you want them to fry quickly which keeps them moist inside and crunchy on the outside.

    1 (16 oz.) can Libby’s Pumpkin
    5 extra large Eggs
    1 cup Chopped Pecans

    Sift dry ingredients into large bowl.

    Combine corn oil, eggs, and pumpkin and beat till well blended. Then add dry ingredients to batter. Blend until mixed. Next, add chopped pecans. Pour batter into 2 bread pans. Bake 1 hour 20 minutes or until done at 325 degree oven.

    TRICK FOR KEEPING PUMPKIN BREAD MOIST: After removing from oven, wait one minute and then remove from pans. Immediately wrap the pumpkin bread into Aluminum Foil and keep it in Aluminum Foil

    I bake this dessert throughout the year and have given it away as a gift to family, friends, and doctors.

    Easy cobbler
    I came up with this when looking for a way to spend less time in the kitchen but still provide good food for my daughter. Hope you enjoy as much as we have. I use blueberry, but I'd imagine it would work with anything filling you like :)

    1 package sugar cookie dough
    1 can of blueberry filling

    Coat a 9x9 in pan with no-stick spray. Use 3/4 of the cookie dough to line the bottom of the pan, pressing in place. Pour can of blueberry pie filling into the pan. Crumble remaining cookie dough on top. Bake at 320 for about 25 minutes, until the top turns golden brown.

    Mrs. Field's Cookies
    2 cups butter
    2 cups white sugar
    2 cups brown sugar
    2 Tablespoons vanilla
    4 eggs
    5 cups oatmeal, ground into a fine powder ( i use a food processor )
    4 cups flour
    2 teaspoons baking soda
    2 teaspoons baking powder
    1 teaspoon salt
    24 ounces chocolate chips
    1 - 8 ounce Hershey bar, shaved

    Cream together butter and sugars. Add vanilla and eggs. Blend well. Sift together oatmeal, flour, baking powder, baking soda and salt. Add to creamed mixture. Add chocolate chips and shaved Hershey bar. Roll into golf ball size balls. May be baked now or frozen. Bake at 350 degrees for 10-12 minutes.
