Roadkill
Yup....Spiny small thing that is much abused, They are really stupid and hide in the base of bonfires to be, they cross the road, never to get to the other side. they look like litle brown porcupiny pigs. and they are ridden with fleas and ticks...

I believe that hedgehogs can be roadkill. All I can really tell you is that they have hair that sticks straight up, like mine and Jackie's.
Look out. White or Red wine sauce?....... They don't have hairs, they have spikes and when you try to catch them they roll into a spiny ball like a sea urchin!

A Porcupine by any other name.....
A hedgehog is truly a real mammal, and yes, related in looks and temperament to a porcupine. I suppose, depending on where one lives, it could be roadkill...perhaps, as she had a recipe immediately on hand, our Tasha is the owner of a Roadkill Cafe~"You Kill em, We Grill em".....

If any of you have ever seen the Disney movie version or any other of Alice In WOnderland, it is the creature that they used to play croquet. The flamingo's were the sticks and the hedgehogs were the balls. Because like someone said they curl up into little round balls.

Very Good, tjhay~ move to the front of the class! There was indeed a Sonic the Hedgehog video game, though it looked more like a cat with a blue head and red shoes! LOL

one can substitute hedgehog in the porcupine recipe in "Joy of Cooking" (1975 edition, p 515). Here it goes: "Skin by hanging back legs from hooks. Remove kernels in small of back and under forelegs. Hang in a cool dry place 48 hours. Soak overnight refrigerated in salted water:
1 porcupine
In the morning, bring this water to a boil. Drain and immerse porcupine again in cold water. Bring to a boil and again drain. Place the meat in a Dutch oven. Add:
3 cups water or light stock
1 rib clery, chopped
1 sliced medium-sized onion
1/4 teaspoon pepper
1 teaspoon salt
Simmmer until tender, about 2 1/2 hours."
The recipe preceding porcupine is for Opposum. It states: "If possible, trap 'possum and feed it on milk and cereals for 10 days before killing..." Shades of Hansel and Gretel! I would continue typing the recipe, but it's pretty gory. I kid you not. :} Lynn0 -

We had Possum Pie, Ratburgers, Mouse and mushroom dips, Rac oon risotto, Snake souffle and Roasted ptarmigan.......It was a FEAST! Mmmmmmmm LOL

I was mowing the golf course greens when I saw a hedgehog and a snake fighting it out.
