I found this recipe. It sounds good too. I wonder if there is a way to substitute something else for the sugar?
Coconut Macaroons
6 Tablespoons all-purpose flour
1 ½ cups sugar
1 tsp salt
4 Cups Angel Flake Coconut
6 Egg Whites unbeaten
2 Tsp vanilla
In a mixing bowl, combine flour, sugar, and salt. Add coconut, unbeaten egg whites and vanilla. Blend well, Drop by teaspoonfuls onto a well-greased and floured cookie sheet.
Bake in preheated 325 oven for 15 minutes or until slightly browned around edges.
Yield 2 ½ dozen
