I'll start:

My grandmother's Braised Brisket (Eastern European)

1st cut (flat cut) fresh brisket--about 4 # well trimmed
1 bay leaf
1 clove garlic
3 whole allspice
black pepper
hot paprika

Preheat oven to 325-350' F.

Place brisket in covered casserole, fat side up. (I trim off as much fat as possible.)

Break bay leaf in half--half under, half on top of meat.
Insert slivers of garlic into fat (or meat itself, if well trimmed.)
Sprinkle with paprika, pepper. Add 3 whole allspice berries.

Cook, tightly covered, at 325-350oF for about 3 hours until fork-tender. Check periodically to see if there is juice on the bottom. If meat begins to dry out, add chicken broth.



Doesn't need any salt - tastes salty from paprika and pepper. You can't overcook it as long as you keep it moist. Serve with something to pour the natural juices over (traditional is toasted egg barley).

    And now for something completely different.
    Using a Black & Decker "Infrawave" (infrared) toaster oven:

    Take 3-8 Foster Farms Hot & Spicy Chicken Wings and put on foil in oven, using "Quick" setting for 8 minutes. Turn them over and cook for 4 more minutes. Enjoy.

    Darn it, I don't have the recipe for fried baloney, but I know it's 3/4 inch thick, I haven't found a place to cut it that thick for me yet!!!!

    Chicken Noodle Casserole

    Boil up 4 chicken breasts, and then shred in a casserole dish
    Boil up a pkg of egg noodles, drain and add to the dish
    Open a can of cream of mushroom, add to the dish, mix
    add 1/2 can of milk to the dish, mix
    Add a small bag of shredded cheese, your favorite. I like colby jack, and mix. The mixture should be moist not dry.

    Salt and pepper to taste and mix well.

    Add a bit more cheese to the top and bake at 350 for 30 minutes, covered, should be bubbly, when you take it out.

    Take out, crush some lays potato chips and pour over top evenly, and bake for another 5 minutes

    Yum!!! You can also make this with two cans of Tuna, drained, instead of chicken.

    4 tsp Worcestershire sauce
    1 ½tsp crushed red pepper flakes
    1 ½tsp sugar
    ½ tsp dry mustard
    ½ tsp garlic salt
    ¼ tsp cayenne pepper
    Place onions in crock-pot. Combine brown sugar, paprika, salt and pepper;
    rub over roast. Place roast on top of onions.
    Combine vinegar, Worcestershire, red pepper flakes, sugar, mustard, garlic
    salt and cayenne; stir to mix well. Drizzle about 1/3 of vinegar mixture
    over roast. Cover and refrigerate remaining vinegar mixture.
    Cover crock-pot; cook on low 12-14 hours. Drizzle about 1/3 of reserved
    vinegar mixture over roast during last ½ hour of cooking.
    Remove meat and onions; drain. Chop or shred meat and onions. Serve with
    remaining vinegar mixture.

    Tomato Basil Soup

    Tomato Basil Soup

    Use that basil! Take about 10 good size roma tomatoes, peel them seed them. throw in a pot, and simmer for about 15 minutes, high simmer, throw in blender with several pinches of basil, garlic clove, if you have it, and puree, put back into pot and simmer, add a 8 0z can of tomato juice, and 2 tablespoons of butter. Add about 1/4 of a 1/2 pt of cream until it just starts getting a creamier color, you can add a dash of Tabasco....Add black pepper, salt to taste....just simmer for about 20 minutes. Taste and see if it needs to be creamier or add salt.

    dish out onto a bowl, eat with croutons, Parmesan cheese and your favorite bread. You can omit the butter, this is sooooooo good and great for cancer patients.

    Put cat in a small room with entire family of five with all three kids under the age of 9. Try and get the cat into the animal carrier to go to the weekly visit to the vet. After one half exhausting hour give up. Drive to the nearest Pizza Hut and order breadsticks, two large pizzas, one plain, one sausage and two pitchers of soda. Repeat for about a decade or until the cat passes away or runs off.

    This was one of our family favorites. Once the kids get a little older you can swap the cat out for a dog and try TGI Fridays for a little change of venue and as the kid's pallets become a little more sophisticated.

    Fried bologna
    Man i havent had a fried bologna sandwhich in years! You need to find you a meat market or a good old fashioned deli. We have a few around us, my fav. is in Grants Fork, Il. The place has been around forever, I can remember my grandfather going there, seems like once a month, always coming back with some new thing to try.
    Do you cut your bologna, we always put four cuts in each slab starting near the center and then out through the edge. keeps the bologna from curling up as it fries.
    looks like I am driving to the meat market today!

    Babs, Rick, and Mary leave it to you guys to get from receipes to kids and cats and make me smile in the process!

    Here is one for ya

    Take a fresh rabbit, cleaned of course, cut into pieces and cover with Tobbasco sauce, I put it in a freezer bag. let it sit in the fridge over night at least 24 hours is better. then bread or coat with whatever combination of spices and flour you usually use for chicken say. Get the oil nice and hot and fry that bad boy up. I am not one for Hot or exceptionally spicy foods, never my favorite to burn my mouth out and now the system doesnt like to process that stuff either, it seems the hot sauce is muted during the cooking process because to me it isnt hot at all. and since we are frying here this goes really good with fried potatoes, and fresh green beans. you can put the beans on a tray cover with Italian dressing mix (the powder type stuff) and some parmessian (sp?) cheese and bake them. All you need now is a good loaf of bread real butter and your favorite wine...
