Noel-asked for Grilled Chicken Fruit Salad recipe
1 chicken breast half, skinned and boned
2 c. Seedless red grapes, halved
1/2 c. celery, chopped
1/4 c. onion, chopped
2 T walnuts, finely chopped
1/2 c. nonfat mayonnaise
1 T. Dijon mustard
1/2 t. salt
1/4 t black pepper
1 T lemon juice
Grill the chicken--cool and cut into small cubes. In a large salad bowl, combine the chicken, grapes, celery, onion and walnuts.
Mix together the mayonnaise, mustard, salt, pepper and juice to make a dressing.
Pour over the chicken salad and toss lightly.
Serve 4.
Calories: 222 Total fat: 5g Saturated fat: >1g calories from fat: 21 Carbohydrates: 24 g Protein: 15 g Cholesterol: 37 mg Sodium: 671 mg

the recipe actually calls for 1/2 t black pepper but I always cut it in half because it gives it too much of a pepper taste. 1/4 t is just right.Noel said:Thank you!

We really haven't done REAL FUN things this summer so far because of the weather and the weather is looking brighter and warmer starting tomorrow. Yeah!!!
We are going to a special camp 8/5-8/8 it is called YOU and ME camp. It is for one adult and up to two children to spend time with their special person.

Chemo is actually done Thursday 7/23 day before Jake's 6th birthday.
Camp will be fun--just the two of us doing things with other parents and kids.
Don't have to worry about cleaning the house, feeding the cat or cleaning the litter boxes.
Having someone to feed the cat and clean the litter boxes.

May not celebrate until the 24th. My dad and his lady friend might spend the night on the 23rd--they don't drink and she frowns when someone is drinking. Maybe I can drink after they have gone to bed since my treatment is at noon and with the steroids I won't sleep.
Party in the computer room that night.

I am to pass along a Thank You from my hubby. He is going to try this recipe. I don't cook, play Betty Crocker or Susie Homemaker. My Father was a Chef and I could not learn from him how to cook...we clashed in that department. So I married an excellant cook!! However, I am very good at Molly Maid, Tim the Tool Man and Lawn Boy!! He said he appreciates the info on calories, etc too!! Pammy0 -
