Seriously Now.......Recipes/Ideas?
I have never tried canning/bottling even though it seems popular here. I have a huge fruit cellar for storage. Any Suggestions?...Salsa, spaghetti sauce recipes?
I am not much of an experimental cook so all help GRATEFULLY recieved. Thanks Family.

What we do is..
give it away to people that need or want it. There are so many people
that do not have gardens for various reasons and love it when they can get fresh vegetables
without having to pay a lot for them.
As for recipes, I need more time to get them out to post Tasha. lol

That is the problem........Everyone here has HUGE gardens and most grow their own stuff, (I know, I've been selling them the plants for the past 2 months LOL) Anyway..I am going to try to sell some roadside, we live on a GREAT corner......Right on Highway #3 at a Stop sign......So I have several varieties including an English Heirloom variety that I have grown for years t'other side of the pond.
Tomatoes here are GRAVOLTING! I have never found owt worth eating since I moved here 6 years ago. No Taste to them at all. Maybe if they get a taste for the Moneymaker tomatoes I could be Rich......And Famous!???
Ok, I'll still talk to those who knew me when I was Poor and Unknown LOL
Might get a big sign made up "DAFT SODS TOMS!"

If you have freezer room, you can blanch the tomatoes ( boil whole in water until the skin peels right off ) let them cool, slice them up and put them in freezer bags to use in the winter for chili, spanish rice, spaghetti sauce, anything that doesn't require a "pretty" looking tomato slice.
And, for green peppers, I just dice them into lil pieces and put them in small freezer bags to add to your winter "specialties" too.
And, with that sign DAFT SODS TOMATOES, everyone will be stopping cuz everyone loves the DAFT SODS! lol

That's what I call the "Ball Blue Book", from the Ball canning jar company. so many great recipes and how to's. Everything you could want to know at your fingertips. I have made pepper jelly, jams, salsa's, relishes, pickles, veggies...done almost all of it. Wasting nothing by mixing it all together and canning it. Please post some pics of the famous overflowing garden bounty~how inspiring to be a good girl and eat your veggies. I am heading to the farmers market tomorrow.

Freezing sounds good...
at least for the onions, peppers, and probably even the carrots. The carrots will need to be blanched first. I would think you could make guatamole (sp?)from the artichokes and freeze that, too.
Tomatoes, I know from my folks, is better canned. My folks make spaghetti sauce and store it for up to two years. It's great. According to my folks, it's not hard to can tomatoes.
You could contact your local extension service and they may be able to advise as to what can be done with the other veggies and even some "how-to" ideas for canning.
If you have a little eggplant, you could make a great rattatooli (sp?) mixed with the tomatoes, peppers, and onions. Veggie stir-fries and eggrolls are great with the cabbage, onions, cauliflower, and peppers.

I sooo reccommend Salsa, and Mississippi Caviar, and Ratatouille, Marinara Sauce, Tomato Pie and Gaspacho for starters. If you Google EASY recipes for the aforementioned, it will save me typing time, and give you the opportunity to sift through the ingredients you have, and add or eliminate those you don't want/have in your garden! I adore cooking and have made everything I mentioned...you can too! :-)

My mouth is watering. What I wouldn't give now for a BLT with homegrown tomatoes (or anything with homegrown tomatoes).
I live in Phoenix and they don't know what a homegrown tomatoe is unless they came from the midwest.
I'm sure you'll find a jillion things to do with your crops. Ahhh, I miss Illinois so much.
