SPRING RECIPES

Okay this is not cancer related, but does everything have to be. I thought it might be nice since spring is here if we could share a favorite springish (if that is a word) recipe. So in the spirit of Spring here is my recipe, hope you enjoy it!

STRAWBERRY DELIGHT

1 round (or 2 small rectangular) Angel Food Cake
1 16 oz. Cool Whip
16-20 oz of cream cheese (softened)
3 or 4 heaping tablespoons of powder sugar
2 large baskets of strawberries
1 jar of glazed strawberry jell

Cream together: cream cheese, whip cream, powdered sugar until smooth (electric mixer can be used.) Break up Angel Food cake into small "crouton size" pieces and cream together with the above ingredients.

Spread into 9 x 13 or 10 x 15 baking dish.

Slice strawberries. In a bowl combine strawberries and jell. Spread strawberry mixture over cream cheese mixture. Refrigerate and serve.

    Yum, indeed! The recipe sounds Straw-RE-berry delish! This weekend is our county's Strawberry Festival; I should send the recipe to my daughter in culinary school so she can make it for her friends! Thanks, Re!

    Moopy it is actually really easy to make and takes like it took a long time! Hope you enjoy both it and the fudge cake recipe. Have a great weekend!

    Wonder if this recipe would work with sugar free jello instead of the glaze jell. I'm diabetic and I'm sure the glaze jell is full of sugar.

    Sounds wonderful and I think I'll try it.

    Cake in a Mug
    Hi Eil, here is the recipe, it is simple and quite tasty. If you want a chocolate cake in and just have a few minutes this is the recipe for you. Hope you enjoy it.

    Cake In A Mug

    INGREDIENTS:

    1 coffee mug

    4 TBSP Flour (not self rising)

    4 TBSP Sugar

    2 TBSP baking Cocoa

    1 Egg

    3 TBSP Milk

    3 TBSP Oil

    Splash of Vanilla

    1 TBSP of Chocolate Chips (optional)

    DIRECTIONS:

    1. Add dry ingredients to mug and mix well.

    2. Add the egg and mix again. Add the oil and milk and vanilla and mix again.

    3. Place mug in the microwave and cook for 3 minutes Cake will rise to the top of mug.

    4. Allow to cool and tip onto a serving plate.

    Thanks, RE! I'm gonna try them both! I love angel food cake - your recipe sounds like a very different & yummy way to enjoy it. And a great dessert for backyard summer barbeques, whether hosting or bringing to.

    Cake in a mug?!? How cool is that? I'm already thinking I'll do that for guests. You know, after the meal, time for coffee & dessert. Bring the cake mugs to the table, everyone thinks it's coffee; then, tell 'em to turn turn their mugs over onto their plates! What a hoot that could be!!!

    OMG, I have a HUGE collection of recipes and have never seen this one.

    Jakeca I wonder if you could substitute the glaze with a jar of sugar free strawberry jam? Also what about using Splenda instead of the powdered sugar? What do you think RE?
