Hamburger Soup
This is a hardy and easy to make soup. With Fall coming, I love to make soups!
2 lbs. ground beef
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. oregano
1 tsp. basil
1 (2 ounce pkg.) of onion soup mix. You use both envelopes in the box.
6 cups boiling water
2 - 8 oz. cans tomato sauce
1 tbsp. soy sauce
1 can mixed vegetables
1 cup elbow macaroni
1. Brown meat, drain and rinse.
2. Add all spices plus onion soup mix
3. Stir in water, tomato sauce and soy sauce
4. Cover and simmer 15 mins.
5. Add vegetables, cook 30 mins.
6. Add macaroni and cook 30 mins more.
Add water or more tomato sauce (to taste)if necessary.0 -

Freeze grapes -- medium colors are the best.
I wash bunches, then cut them up and place in small baggies. After dinner, before
bed when you have the urge for a sweet treat --- grab a bag out of the freeze and
enjoy the sweetness of a frozen treat without the hundred of calories.

If you are inclined to home can foods
You can make hamburger dill chips out of small zuchinni squash and no one can tell the difference between them and the pickle chips. Also larger zuchinni can be ground up and used for making relish. So if you have not planted enough pickles you now have an alternative. Just google up the recipies. People are always giving away zuchinni from thier garden.0 -

Super Bowl Party Cheeseball
4oz jar of Old English Cheese Spread
4oz jar of Olive and Pimento Spread
8oz Cream Cheese
Ritz Crackers
Stick Pretzels
Mix all 3 cheeses, chill them in order to make shaping easier
You can roll this in some crushed ritz (crush finely) to make handling and shaping possible.
Shape like a football on a large plate, this is super easy.

Our garden has been overflowing with basil this summer. I love pesto, but traditional Italian pesto is just a little too intense, too strong, for my taste.
I found this recipe on allrecipes.com -- the addition of spinach and almonds makes it milder -- and healthier, too! I've been making it all summer -- this recipe makes a big batch of about 4 cups of pesto, because it freezes beautifully.
Spinach Basil Pesto
(adapted from recipe posted on allrecipes.com by Dianne)
3 packed cups spinach leaves
2 packed cups fresh basil
1 cup toasted almonds
1 cup grated Parmesan cheese
8 cloves garlic
1 teaspoon freshly ground black pepper
2 tablespoons fresh lemon juice
1 cup extra virgin olive oil
Whiz everything up together in a food processor. Taste, and add more lemon juice, pepper, or olive oil to your liking (don't let the strong raw garlic taste scare you -- it will mellow after a few hours in the fridge).
Just made a batch of this for dinner tonight -- pasta with pesto and zucchini from our garden! We also love mixing leftover pesto with light mayonnaise for a sandwich spread or vegetable dip.

2 CUP HOT WATER
1 ( 16 OZ. ) PKG. FROZEN STRAWBERRIES, SWEETENED ( UNDRAINED AND UNTHAWED )
1 CUP CRUSHED PINEAPPLE
MIX FIRST 3 INGREDIENTS AND PUT INTO 9 X 13 INCH PAN. BAKE 10 MINUTES AT 350 DEGREES AND COOL.
MIX TOGETHER THE NEXT 3 INGREDIENTS AND LAYER THEM OVER THE PRETZEL MIXTURE.
MIX TOGETHER THE LAST 4 INGREDIENTS. WHEN PARTIALLY SET, POUR OVER CREAM CHEESE LAYER. REFRIGERATE AND ENJOY!0 -

1 pound of pasta (any shape you desire, sea shells are the best)
1 green pepper cut up into small pieces
1 red pepper cut up into small pieces
1 sweet onion cut up into small pieces
celery cut up into small pieces
package of cherry grape tomatoes (you could cut in half or use whole)
3/4 cup of sugar
1/4 cup of oil and vinegar
can of tomato soup
mix sugar, oil, vinegar and soup together
cook pasta
cut up veggies
when pasta is cooked, mix everything together

Tailgater's Chili
2 LB ROUND STEAK, CUT INTO 1/2 INCH PIECES
1 ( 20 OZ. ) CAN KIDNEY BEANS, DRAINED
3 TBSP. CHOPPED GREEN CHILIES
MIX TOGETHER. ADD TO ABOVE:

1 cup celery
2 Tablespoons Worcestershire sauce
1 Tablespoon mustard
2 Tablespoons vinegar
Cook together hamburger, celery and onion until done. Drain. Add remaining ingredients. Simmer about 5 minutes. Serve on big hamburger buns. We add a slice of American cheese on top and put it in the microwave for just a few seconds to just melt the cheese a little.0 -

Make sure potatoes are thawed. Bake uncovered at 325 degrees for 1 hour. This is a great dish to take to a potluck. You can just keep it in a crock pot so it will stay warm.0 -
