How do you fix 'em ?

I'm an avid fisher woman, but being in Mn. it's mostly pan fish. I fillet and batter, and fry. Sometimes fillet and put on the grill with butter. So tell me about flounder, can you compare the taste for me ? Most people would say...dah it taste like fish. Not so for me. I love walleye, sunfish and crappies. And yes they all taste different. Airport is within site of the flounder area, what time should I pick you up. Actually the approaching jets fly over me while I'm fishing.

They call them specks down here...speckled perch to be exact.
Flounder are super mild and not an oily fish, very light and delicate.
I love fried fish as well, but my wife doesn't like me to fry fish too much.
So I fillet these out, you get four nice fillets from each fish BTW.
Anyways I fillet these (absolutely no bones), and put them on a cookie sheet sprayed with a little PAM first.
I make some stuffing by sautee some chopped onion and celery, add in a little shrimp, scallops and crab if I have it.
Take that and put it in a mixing bowl...add about a cup of Panko Bread crumbs, add an egg, a little fresh parmesan, a teaspoon or so of Old Bay Seasoning, and a small splash of lemon or lime juice.
Then a scoop of mayo, and some heavy creamy. Mixing it until it's thick and gooey, but not not clumpy like thick oatmeal...sort of thinned oatmeal, it doesn't hold shape...add heavy cream to thin it.
Then a few tables spoons of the stuffing on each piece of fish and bake on 350 for about 25 minutes...just don't over cook it as the fish will dry out.

I haven't tried that stuffing with crappie, but I'm sure you can...
Crappie for me here...no matter what my wife says are strictly breaded and deep fried with a big pot of cheese grits...LOL.

I didn't go out much during treatment. I've been done with the rads and chemo for over three years now.
Most of the time when out fishing and doing yardwork I still wear long sleeved shirts, a buff and a floppy hat.
Though I pretty much always have shorts and flip flops on when not at the office.
I'm bad about sun-screen so I stay covered up pretty much...
I also get scanned at the Dermo every six months...whom still gives me crap about being in the sun so much.

I know doing what you do on a daily basis probably becomes routine after awhile. I know you adjust to the situation dealt you. But can't begin to imagine what you have had to deal with over the years.
