Upper Tampa Bay ~ Trout and Cheese Grits
So when it does, and you are pretty much eating good again....you'll appreciate this photo much more than you might at the moment;
Sand Trout & Cheese Grits
Fresh caught Sand Trout this past Saturday, fried up and served with a big steamy pot of Cheese Grits.
Greg, Pat and others....well, let's just say that I'm thinking of you, bawahahaha...

Love the fish John, but never been a lover of grits.
I would have prefered the fish with chips ( fries) and lots of salt and vineger.

OK, for you not so Southern Folk...(even though I'm a damn yankee from Ohio).....
I will also share my photo of some fresh grouper caught under the Skyway Bridge in Tampa Bay a few months ago.
Fish-N-Chips
Fresh Grouper, home made fries and a splash of Malt Vinegar....and I definitely had a Corona during the making of that meal.

Growing up in the North, the few times I had grits I was fed the kind that were "instant" and tasted like the box they came in. Of course, they had a "Yuck factor" that was off the scale. Having lived in Atlanta for 18 years now, I have come to love grits--especially home made cheese grits. My wife does a great job with them. I still won't eat instant grits, just as I won't eat instant oat meal--but when grits are done right, they are hard to beat, and make a good choice when you are on the road back to a regular diet after neck rads and chemo.0 -

About a month ago Jim and I went to Daytona for lunch. I ordered catfish fingerlings and cheese grits of which Jim had a couple bites. Not bad considering he is just starting to eat real food.

I have lived in Florida for 17 years and still don't eat grits, When we were in Key West last week they always asked "grits or home fries" when ordering breakfast.

Grits are basically dried ground corn. You boil like two cups of water and add in around a quarter cup of grits. Cover the pot and simmer, the grits will soften up to the consistancy of cream of wheat almost.
You can add in a little garlic powder and around a half cup or so of shredded cheese (for cheese grits).
As they are close in flavor and texture to cream of wheat, a lot of northern people will add sugar and milk (for plain grits).
But in the south, you had a tab of butter and a little salt and pepper (again for plain grits).
The Sand Trout is just a type of salt water trout in Florida. The main targeted species would be Speckled (Spotted) Seatrout.
But there are two other in the Gulf know as Silver trout and Sand Trout. If you are on the East Coast they have another called a Weak Fish.
All are less targted than the Speckled Seatrout...but the Speckled is more predicatable to catch and is classifie a sprt fish.
They have strict limits on both size and bag limit, even areas and seasons.
The silver and sand don't have those restrictions, aren't classified as sport fish and are not as predictable to target.

Polenta cooked the same treated the same and I think is the same.
We have ocean trout or ocean trout but only one variety and its a top class eating fish
