Stevia?
Do any of you bake with Stevia? I asked my nurse practioner about it yesterday, and he was unsure. He said he has heard good things about it. I was just wondering if any of you had any insight? Thanks.

I've baked a couple of things with it. It's kind of difficult to calculate how much to use in a recipie. For example, I make some refrigerator cookies with it, and use 12 drops in a batch, but they aren't very sweet. The other risk is that if you use enough to make things as sweet as you're used to, they can have that funny stevia taste. Supposedly xylitol is okay to use in moderation, and is easier to work with. Keep in mind, however, that xylitol is very toxic to dogs.0 -

Stevia is a step in the right direction towards lowering someone's daily sugar intake. I found that I did better avoiding anything that tasted sweet at all. If you are looking to substitute stevia for sugar when you bake, you are still gonna consume carbs that turn into sugar after you eat that "no-sugar cookie."
I do use stevia but only in my morning whey protein/asparagus/flax seed shake (which is really hard to drink without the stevia).0 -

I think what my sister and I are going to do,is to only allow ourselves to have any dessert on weekends at first. Then every other weekend. I know myself well enough to know that if I feel like I can't have anything sweet, I will eat even more. But if I know in a few days I can have that sweet, I do better. Does that make sense? LOL!0 -

I stopped eating sugar as soon as I knew of the sugar/cancer connection. But I used other things, like agave nectar, for awhile, while I was getting used to not eating sweets. I stopped using the nectar about 1 year ago too. I do think it's less stressful to make these changes gradually. You'll be surprised at how your tastes change and how unappealing the things you used to love are after you're off of them for awhile. Good luck!!!0 -
You can bake with it but you
You can bake with it but you have to replace the bulk of the sugar with something else to make sure the recipe comes out right. For example, if the recipe calls for 1/2 cup of sugar, you have to replace that half a cup with something else. Google "baking with stevia" for some suggestions. I've switched to stevia in an effort to cut back on sugar, it's not as sweet as some of the artificial sweeteners, so it's taking some getting used to. I like that it's natural though.....0 -
