I thought I'd share this "special" recipe here instead of submitting it at the project site. (you will see why after reading instructios on preparation of cake) )...hahaha!
"Merry Christmas"...Love...Sue
Once again this year, I've had requests for my Tequila Christmas Cake
recipe, so here goes. Please write this down...I'm getting tired of typing
this every year...
1 cup sugar
1 tsp baking powder
1 cup water
1 tsp salt
1 cup brown sugar
Lemon juice
4 large eggs
Nuts
1 bottle tequila
2 cups dried fruit
Sample tequila to check quality. Take a large bowl; check tequila again to
be sure it is the highest quality. Repeat. Turn on electric mixer. Beat one
cup of butter in a large fluffy bowl. Add 1 tsp of sugar. Beat again. At
this point, it is best to make sure tequila is still OK. Try another cup
just in case. Turn off the mixer thingy. Break 2 eegs and add to the bowl
and chunk iin the cup of dried fruit. Pick the fruit up off the floor. Mix
on the turner. If the fruit getas stuck in the beaters, just pry it loose
with a drewscriver. Test the tequila for tonsisticity. Next, sift 2 cups of
salt, or something, check the tequila, now shift the lemon ice strain your
nuts. Add 1 table. Add a spoon of sugar or somefink,whatever you can find.
Greash the oven. Turn the cake tin 360 s and try not to fall over. Get up,
check tequila. Don't forget to beat off the turner. Finally throw the bowl
through the window. Finish the tequila and wipe off the counter with the

remind people of the recipe project - like I'm not doing
that enough .
I agree with John - complete flexibility here.
Why not vodka too? That and tonic used to my drink
of choice. Having lived in Texas for 20 years, I was
no stranger to tequila either .
Love the festive PIC by the way! Is that the one
that ran over Lizzy's grandma? .

I tried that Tequila cake recipe and it was a hit. The cat even loved it. The dogs just about licked her to death. Even my pet squirrel was happy. I am going to buy some more liquid ingredients and make another one. The heck with the cake mix part.Thats if I can find my car keys and then I have to find my car,HAHA!!!! John

Tequila Sunrise Cake
Cake
=========
3/4 cup butter
1 cup sugar
the zest of one large orange
3 large eggs
3/4 cup sour cream
1/2 cup orange juice
2 Tbsp Curacao
2 Tbsp Tequila
2 1/4 cups all purpose flour
1/2 teaspoon salt
2 tsp baking powder
1/2 tsp baking soda
1/4 cup pomegranate juice
a drop or two of red food coloring
Curacao Glaze

1/2 cup sugar
1/3 cup orange juice (no pulp)
2 Tbsp Curacao
1/4 cup powdered sugar
Optional Topping: 1/2 cup pomegranate seeds
Preheat oven 350 degrees. Bundt pan - well greased and floured.
In a mixing bowl mix together the dry ingredients - flour, salt, baking powder, baking soda and set aside. In the bowl of an electric mixer, cream the butter, sugar and orange zest until light and fluffy - about 5 minutes. Add eggs one at a time, beating after each addition. Add sour cream. Add flour mixture and orange juice to the mixer in 3 alternating additions. On low speed stir in the tequila and the curacao. Pour 2/3 of the batter into the bundt pan. To the remaining batter, add the pomegranate juice and the red food coloring. Make a slight well in the center of the first layer of batter in the pan. Spoon the second layer of batter into the well. Bake 40-45 minutes or until golden brown or until a pick inserted into the cake comes out clean. Let cool 10 min in the pan then invert cake onto cooling rack with a piece of parchment underneath the rack.
In a small pan over medium heat mix the sugar and orange juice until sugar dissolves - about 2 minutes. Remove from heat add the curacao and powdered sugar. When the cake is almost at room temperature, spoon the glaze gently over the cake allowing it to absorb as much as it can. Top with the optional pomegranate seeds. Remove to a decorative platter and serve.

I love it!!! Does there have to be a worm in the bottle and do we need to eat it before or after we wipe up the mess with the cat. Yea I have four so there will be no mess here!!!!!0
