Chicken Soup or beefPhillieG said:Very Good News
Both sound great. Love fresh homemade chicken soup.
Do you use a crock-pot by any chance?
-p
I don't use a crock pot because I don't like how the chicken shreds up.
Chicken Soup
Good size pot
4 chicken breast, diced in large pieces
4 med potatoes, peeled and quartered (lg pieces)
4 carrots
two hand fulls of fresh green beans, snapped in two
4 zucchinis, cut in half length wise then again, then cut in 3 inch pieces (won't fall apart)
1 packaged of frozen Veggies to make heartier
Onion and garlic optional, but I love it
2 celery stalks, diced
half a cabbage, cut in quarters
add all to pot, simmer about 30 minutes, add chicken broth, garlic salt, simmer about five more minutes and it is done!
I like mine with a bit of salsa and lemon, of course!
I also make this with big chunks of a roast and maybe some soup bone, ox tails or short ribs, I cook them first for an hour and a half, then add the veggies. you could put this meat in crock pot, until tender then throw in veggies for the last two hours. This meat will shred so easy, put some in a flour tortillas with salsa and dip in your soup as you eat the soup. Oh, man!!!!!! I limit myself to one small chunk and one corn tortilla...0
