Healthy Eating: Veganmofo

There has been some discussion on this board of late about a healthy diet being a good support for one's immune system during cancer treatment. I certainly know that we have hued to that purpose during my husband's treatment. Since my husband also has heart issues, I believe our low-fat diet has improved his heart function and made him better able to tolerate the cancer treatments that have been prescribed for him.

While I know that many (OK...maybe most) of you are not following a vegan diet, there is an event in progress called Veganmofo. The idea is for vegan bloggers to post a vegan recipe or vegan-related post every day for the month of October. Veganmofo has apparently been going on for several years.

I have found the blogs interesting because there are some pretty creative cooking techniques discussed on the blogs(substitutions, etc.) that I haven't known to try and because there are many very good recipes posted as well. Even if you are not vegan, there certainly are recipes for healthy vegetable and fruit dishes that you might enjoy.
