I have been making fudge and divinity all day and I decided that some of you may want the recipe for divinity. For those of you who have it, maybe you can improve on my version.

DIVINITY FUDGE

2 1/3 CUPS OF SUGAR
2/3 CUP OF WHITE CORN SYRUP
1/2 CUPS OF WATER
1/4 TSP OF SALT
2 EGG WHITES
1 CUP CHOPPED NUTS (IF DESIRED)
1/2 TSP VANILLA EXTRACT

COMBINE THE SUGAR, SYRUP, WATER AND SALT IN A SAUCEPAN OVER A LOW HEAT, STIR CONSTANTLY UNTIL THE SUGAR DISSOLVES. CONTINUE TO COOK WITHOUT STIRRING TILL IT REACHES 265 DEGREES ON YOUR CANDY THERMOMETER. REMOVE FROM HEAT AND SLOWLY POUR OVER THE EGG WHITES WHICH HAVE BEEN BEATEN STIFF WITH A MIXER, ADD THE VANILLA. CONTINUE TO MIX UNTIL IT LOSES ITS GLOSS AND HOLDS ITS FORM. ADD NUTS IF DESIRED.

YOU CAN ALSO ADD CANDY CAN BITS. IF YOU WANT A DIFFERENT FLAVOR JUST SUBSTITUTE THE VANILLA FOR WHATEVER FLAVOR YOU DESIRE. I MAKE COCONUT, ROOTBEER, VANILLA AND STRAWBERRY.

    Sounds really good but I have a candy making impediment. Anything that requires a thermometer is over my head. A friend realized this and took pity and gave me this recipe.

    1 cup or 14 oz condensed milk
    1 tsp vanilla
    dash salt
    1 pkg or 12 oz semisweet chocolate chips
    1/3 cup walnuts

    Put all ingredients except nuts in heavy 1 1/2 quart saucepan. Cook over medium heat, stirring constantly until chips have melted and mixture is smooth. Stir in nuts. Pour in 8 inch square pan. Cool at room temperature 30 minutes. Refrigerate to finish setting.

    I think they made this once on Oprah too. Would love to make yours but have to rely on donations. Did I ever tell you about the time I baked a cake and thought I was using a one cup measuring cup but turned out to be two cups measuring cup? Ever see a cake with twice the water used? Looks like rubber on the bottom and it takes a long time to bake.

    Yum, that sounds good too I will try it as well. I love your two cups of water cake, it reminds me of a funny cooking story I have. We go camping a lot and I use shakers for all my spices. Well, I place the salt and pepper shakers on the table to have with our steak and corn. My husband kept asking why the salt wasn't working and why I made the corn so sweet. I told him "I don't know must be you". Turned out I had replaced the sugar with splenda in one of my chemo induced moments. We all had a good laugh over it and still do when we are camping.

    Is that how 'sweet corn' started? lol. We love camping too. At our house anything happens we always blame the dog!
