Off Topic~ Is anyone doing any canning??

This past week I put up 16 jars of strawberry jam. The Puyallup Valley grows some of the juiciest, and reddest berries ever, and so sweet!
This week starts the "green bean scene"...today I did 7 quarts of "pickled green beans" and in the next day or so will do the usual canned (in a pressure canner) green beans.
I am contemplating doing some salsa, pepper relish, spaghetti sauce with meat, and stew meat.
What are you all canning??

    I wish I knew how! The most I've done is frozen stewed tomatoes because we had a huge crop one year. Now we just do one plant. I barely got the garden in this year. We are still waiting on everything.
    Have fun, maybe I will try next year!

    Boy, wish I lived near you, it all sounds delicious! I made jam from figs using jello. Yesterday, I used the blueberry jello and addes some blueberries for show with the figs. It tastes great even if it has sugar.

    If only....
    I knew how .... lol I never paid attention when my mom did it when I was a child...I'm afraid I'd poison us with botulism...but then again I could just use that on my wrinkles...like Botox! I still remember the delight of canned veggies in the dead of winter...and home made jams, jellies and apple butter...yummmmmmm.....

    Making my mouth water to think of it....

    Its been years ... but I have canned
    beans, soups, broths .. never any salsa. Sounds like you are having so much fun.

    I too worry like Nancy above about the lid placements -- and getting my family sick .. I think once the weather cools out here in Southern California - mid October, I may give it another try.

    Okay girls~~
    You need a "Canning Bible" which for me, is the Blue Ball canning book. It is actually a large paperback~maybe 50 glossy pages. It has Everything you would need for the information on canning, both hot water bath, pressure canning, and freezer canning.
    I can't live without mine!
    I learned several years ago, at church they had a "back to basics" day of classes. You bring a sack lunch and there were classes on canning, knitting, sewing, jewelry making, how to make the perfect pie crust~ it was fun and educational. Taught by women in the church.
    I happened to win the drawing for the canning book, and I was off to a great start.
    That fig jam sounds good! And with the jello added~ I taught my sister last summer, and she is back again this summer, so she is the fig lover~ i will pass that one on!

    I only had one batch of pickles go bad on me, and we knew it within weeks~the water was cloudy and it was sad to have to dump everything. But, it was a rare event. Just follow the directions. Keeping the area sterile, and all your equipment. The book says it all~really!

    Back in my former life (before kids), we had a huge garden and I always canned tomatoes, and pickles from my cucumbers. It takes a long time to eat all those pickles! But it sure was nice to use home-grown tomatoes every time I needed to make spaghetti sauce or a casserole! I remember making beet relish too - my hubby loved that, although I am not a fan of beets. No one ever got sick from botulism, thank goodness!

    Teaching grandkids and nephew to can jams and jellies. Nephew to give his mom some for Christmas. Made strawberry, black raspberry, black cherry, mixed berry and peach. Last year we did a lot of applesauce and spaghetti sauce.

    At my brother's farm I have in 20 roma tomato plants and some pickles. My brother will pick the tomatoes for himself when I am on vacation as his did not do as well. Pickles will be ready this week too. Lots of work when I feel well. Will probably give away produce when I feel yucky.

    We freeze tomatoes and green
    We freeze tomatoes and green peppers. We used to freeze corn, but, haven't for a few years now.

    Even with air conditioning. I've never done a whole lot but with this heat I don't even want to think about it. I've always had probelms with heat but it's worse after chemo. May do some spaghetti sauce later this summer if we get enough tomatoes. Usually I freeze everything else 'cause it's a lot easier.
