OK, ladies lets break out the cookie recipes. I love to make christmas cookies to give away to friends and family. Do you have a special or favorite you'd like to share? Hugs, Diane

CREAM CHEESE SUGAR COOKIES

1 CUP SUGAR
1 CUP BUTTER , SOFTENED
1-3OZ.PKG. CREAM CHEESE, SOFTENED
1/2 TSP.SALT
1/2 TSP ALMOND EXTRACT
1/2 TSP. VANILLA
1 EGG YOLK (RESERVE WHITE)
2 1/4 CUPS ALL PURPOSE FLOUR
In large bowl, combine sugar,butter,cream cheese,salt,extracts,and egg yolk. Blend well. Stir in flour until well blended. Chill 2 hours.
Heat oven to 375 degrees. On lightly floured surface roll, out dough, on third at a time, to 1/8 in. thick. Cut into desired shapes with cookie cutters. Place on ungreased cookie sheets. Leave cookies plain or brush lightly with beaten egg white and sprinkle with colored sugar. Bake at 375 degrees for 7 to 10 minutes or until golden brown. Cool completely to frost. Makes 5 to 6 dozen.

    2/3 cup butter or margarine softened
    1 cup sugar
    1 egg
    1/2 cup cocoa
    1/3 cup buttermilk
    1 tsp vanilla
    1 3/4 cups flour
    1/2 tsp soda
    1/2 tsp salt
    Icing:
    2 ounces unsweetened chocolate
    2 tbsp butter or margarine
    3 tbsp water
    2 cups confectioners sugar

    Mix thoroughly butter, sugar, egg, chocolate, buttermilk and vanilla. Stir in flour, soda, and salt. Cover, chill 1 hour.

    Heat oven to 400 degrees. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheet. Bake 8 to 10 minutes or until almost no imprint remains when touched. Immediately remove from baking sheet and cool. Frost with Chocolate Icing.

    Icing: Melt unsweetened chocolate and butter over low heat. Remove from heat and blend in water and confectioners sugar.

    This makes a cake like cookie. Just like my gramma used to make. At least my little kid brain remembers them like this.

    3 c. chinese noodles (chowmein)

    melt chips in double boiler (or at 30 sec intervals in microwave)
    add pnut butter
    stir
    add chowmein noodles and stir real good

    drop by spoonfuls on waxed paper, let "dry" or harden.

    *I have used chocolate or peanut butter chips as a substitute, and this year used Nutella instead of peanut butter.

    Holy cow,
    We used to have neighbors that would make these and give them to us with other cookies at Christmas. They made chocolate ones and they were so good! My favorites but didn't know how to make them! Now I do! :>)

    Christmas roll out cookies!
    Chocolate Roll-Out Cookies from Bon Appétit

    Ingredients
    2 1/2 cups all purpose flour
    1/4 cup unsweetened cocoa powder
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1/4 teaspoon baking soda
    1/2 teaspoon ground cinnamon (optional)
    3 ounces bittersweet chocolate, chopped
    1 cup (2 sticks) butter, room temperature
    1 1/3 cups sugar
    1 large egg
    1/2 teaspoon vanilla extract
    Sprinkles or other sugar decorations (optional)
    Royal Icing (optional)


    Preparation
    Sift first 5 ingredients and cinnamon, if desired, into medium bowl. Stir chocolate in metal bowl set over saucepan of simmering water until melted and smooth. Set aside. Using electric mixer, beat butter in large bowl at medium speed until smooth and creamy, about 2 minutes. Add sugar and beat until mixture is pale and fluffy, about 2 minutes. Add egg; beat until well blended, about 1 minute. Reduce speed to low and beat in vanilla and chocolate. Add flour mixture and beat on low speed just to blend. Gather dough into ball; divide in half. Form each half into ball and flatten into disk. Wrap disks separately in plastic and chill until firm, at least 4 hours. DO AHEAD: Can be made 2 days ahead. Keep chilled. Let stand at room temperature 30 minutes before rolling out.

    Position rack in center of oven; preheat to 350°F. Line 2 baking sheets with parchment paper.

    Working with 1 disk at a time, roll out dough between 2 sheets of waxed paper to 1/8-inch thickness for smaller (2-inch) cookies and 1/4-inch thickness for larger (3- to 4-inch) cookies. Using waxed paper prevents you from adding too much flour, which will make the cookies tough.

    Using decorative cookie cutters, cut out cookies. Cold dough is much easier to work with. If it gets warm as you're cutting out the cookies, place the dough—waxed paper and all—in the freezer for about 5 minutes.

    Use an offset spatula to peel away the excess dough and transfer the cookies to parchment-lined baking sheets, spacing 1 inch apart. Gather scraps, roll out dough, and cut more cookies, repeating until all dough is used. If not icing cookies, decorate with sprinkles or other sugar toppings, if desired.

    Bake 1 sheet at a time until cookies are firm on top and slightly darker around edges, about 9 minutes for smaller cookies and up to 12 minutes for larger cookies. Line baking sheets with fresh parchment as needed. Cool completely on rack. Decorate cookies with royal icing if desired.

    DO AHEAD: Cookies can be made 4 days ahead. Store between sheets of waxed paper in airtight containers.

    Kids can do this
    I go to my son's house in Connecticut every year for Christmas. Several years ago I asked my grandson (who was then around 6) if he wanted to make some Christmas pretzels... and he did. It's so easy ... and yummy. You just get a bag of those smaller pretzels (in the usual pretzel shape) and put them flat on a cookie sheet. My grandson handled that just fine. Then you put a Hershey chocolate kiss on top of each pretzel. My grandson did great at that ... but I had the job of unwraping the kisses so I had a hard time keeping up with him. Then you put the thing in the oven at about 200 degrees for maybe 4-5 minutes ... or just until the kisses get soft. NOT melted ... just SOFT. Then you take them out of the oven and while they are still soft you kind of push a red or green M&M on top of the kiss ... and that's it. We make a ton of them because everyone loves them. This year I'm going to try to get the youngest grandson involved ... he's 3 so I'm already prepared for a mess ... but it will be a fun mess. Of course the older grandson will be helping. He loves those things. In fact ... when I went to visit them this summer the older one asked me if we could make the pretzels ... and my son said "It's NOT Christmas yet!" So ... I guess we have a tradition going ...

    Here is my contribution
    EASY COCONUT MACAROONS
    1 (16 oz.) bag coconut flakes
    1 (14 oz.) can condensed milk
    1 tsp. almond extract
    1 (16 oz.) bag of semi sweet chocolate chips
    1 cup of walnuts

    Preheat oven to 350 degrees. Mix coconut flakes, condensed milk and almond extract together in a large bowl. Mix until well blended and all the milk is absorbed. Drop mixture from spoon on ungreased cookie pan. Bake 10 to 12 minutes until bottom of cookie turns light brown. Cool on rack. These cookies stay soft and chewy.

    Melt chocolate chips and dip top of cooled macaroons in melted chips. If desired you can also dip the chocoate top in chopped walnuts, sprinkles of any sort, use your imagination and go wild.

    Oreo Snowballs
    These are very easy and rich tasting so they satisfy your chocolate craving with just one or two.

    1 pk Oreo Cookies
    1 pk cream cheese (8 oz)
    1 pkg white almond bark

    Using a blender grind the package of Oreo cookies (you may only be able to do a few cookies at a time). With a hand mixer or Kitchen Aide blend the cookie crumbs with the cream cheese. Roll into small balls and pace on cookie sheet then set in the frig to chill for a while.

    Melt almond bark. Take the Oreo balls out of the frig and using a toothpick dip each one into the bark then set them on wax paper to dry.

    Christmas cookies all year round
    I've just run out of time and out of energy - have decided that I'm going to make a different batch of my favorite cookies once a month, all year long. And I'll have to share them with friends and my daughter's family, or I'll spoil my new resolution to exercise and lose weight!

    Hello Dollies
    1/4 c. butter
    1 c. graham cracker crumbs
    1 c. chopped nuts
    1 c. semi sweet morsels
    1 c. flaked coconut
    1 can (14 1/2 oz) condensed milk

    Preheat oven to 350 degrees. Melt butter in 9 inch square pan. Layer graham cracker crumbs over butter and press firmly with a fork. Put a layer of nuts, then layer of morsels and finally coconut, pressing each layer gently with a fork. Pour milk over the top layer. Bake for 30-35 minutes.

    Some people call these 7 layer bars but I can figure out what the 7th layer is, I only count 6 things, go figure. Merry Chistmas
