Eating for life: Coconut Curry Soup!

This recipe is from the "Living Cuisine" uncook book by Renee Loux Underkoffler. I made it last night, and it really tasted like something you'd get at an expensive restaurant. I tend to choose recipes that are very simple out of laziness. This one was perfect for that. Serve with a salad, and it's a complete meal!

2 cups young coconut meat (Asian markets have these)
all the water from the coconuts
1 cup, or 1 fully squeezed juice from an orange
1/2 avocado
1 clove garlic
1 tbs minced ginger
3 soft pitted dates (i used dried ones)
2 tbs curry (i used plain tumeric)
2 tbs soy sauce or nama shoyu, or liquid aminos
pinch of black pepper (recipe says cayenne)
1 tsp sea salt

Blend all items in a blender or food processor, serve.

The recipe says to add chopped cilantro and mushrooms and basil to it, but i only used what i had, and it was perfect!

    Wow.... That sounds interesting
    I don't like curry (taste nor smell) but could replace it like you did. I think my husband would love this. He and our youngest son (almost 15) love coconut and Chinese foods.

    QUESTION: You serve this at room temp/ uncooked?

    WARNING: Sea salt is NOT the same measurement if it's plain table salt. I found that out the hard way! :o)

    Hi Diane! Yeah, a little bit of tumeric, and you can't taste it. All of the flavors marry to form one delicious dish! It is served raw. All the ingredients are living, and therefore LOADED with enzymes. See if you don't feel some extra energy after eating it. As far as the salt goes, just season with it to taste. I don't like things really salty, so i used about half a tsp. of sea salt is all. Like i said, the other flavors will combine, so you won't need much salt.

    Let me know if you and your family like it!

    Hi Don! I got the recipe out of a book by Renee Loux Underkoffler called "Living Cuisine: The Art and Spirit of Raw Foods". It's probably one of the best raw food uncookbooks i've ever seen. Many of the recipes are simple, and DELICIOUS! I got the book from a friend who works for a raw food company locally. I don't think they sell it, but i'm sure you can find it. If you try and can't, let me know and i'll see if my friend knows where to get one.

    We went to the Gerson Institue a little late that day, and the secretary was wanting to leave. She gave me a bunch of papers describing the program, and the pre-requisites. The program is not very expensive if you're going to do it at home; $125, or something close to that. The program in Mexico was VERY expensive, and there's a four week waiting list. The program is intense. I can see why it works. You have to juice 13 times a day (Emily made larger servings for less times per day), plus three meals (both raw and cooked), and various snacks. I haven't read the books yet, but i plan to. Oh, also, there are coffee enemas that you can also do yourself. Emily did. The Institute was nothing like i was expecting. It's directly outside of downtown in a very old Victorian house. Apparently they offer classes there too. If we hadn't been so late, we would've gotten some sort of tour.

    I'm going to look on eBay for the books. Without buying the whole program, the books were sort of expensive on their own.

    Are you still planning a trip to visit them? Are you considering doing the program either at home or in Mexico?

I have also seen the infomercial that Montel does for the Healthmaster brand he is selling, have you seen it and what are your thoughts? I need something reasonably priced and easy to use/versatile. I know you give up things to gain versatility, but we have a small home and kitchen space is at a premium.

    So the raw, whole foods thing really seems to be working for you. I'm so happy for you, you really seem to be doing much better. I know it makes life better when you feel well and have the energy and confidence to do the things you like and want to do when you want to.

    Hello there! I've been researching every juicer i can find, and since Dr. Gerson has said centrifugal are unacceptable, getting a cheap juicer is out of the question.

    The best one i can find for the money is the Champion. It's a masticator, and i think it also presses the juice. If you can afford it, everyone recommends the Green Star, or Green Power jucier. They are way out of my price range at $430!!

    I have not seen the Healthmaster, but i will definitely google it! I hope it's not a centrifugal one!

    I do feel soooo much better! I even feel like i'm dropping weight already! The prep time for many of the things i've been making has been grueling, but that's mainly because i don't have a lot of the correct equipment. I made a raw chocolate pie yesterday. The crust didn't turn out so hot, but it was still heavenly, and a hit with everyone. Being a chocoholic, it really hit the spot. Tonight i went over board and made eggplant manicotti. It was decadently delicious, but took me all day to make!

    Let me know if you decide on any particular juicer. I'm trying to find a used Champion, but i'll settle for any juicer that is cheap, and isn't centrifugal!
