external rads and returning to normal diet

OK, it has now been 5 weeks since my last of 25 external rads. I was taking 4-6 Imodium a day for about 4 weeks in the last 2 weeks of rads and then for the next 2 weeks. I began a probiotic 3 weeks ago and it has helped and now I may go 3 days w/o Imodium but then something happens. I have had such a bland diet for so long but am trying to slowly add something better. Do any of you who know this problem have any suggestions as to the best foods to slowly add to my diet? I have been able to eat fruit( frozen or canned) and turkey, chicken, fish(grilled) but vegetables seem to be a no no. I may never eat mashed potatoes again! So if you can give me some ideas, I will be most grateful.
