    Easy peasy

    Boil leeks until just cooked and add all natural, unsweetened apple sauce at end.  Tastes really good as veg side

    Cellery, carrot, leeks, barley, any beans you like, turnip, spinnach, onion.  Sweeten to taste with a little carrot juice or unsweetened apple sauce.  Simmer away.  Use low sodium beef or chicken broth.  Shouldn't need to thicken but if you need to a little cornstarch not flour.  Add your favorite herbs to taste, plenty of pepper.

    Crescent Chicken Casserole

    1 lb chicken, cooked and chopped ( I used 2 cups )

    1 cup shredded cheddar cheese

    8 crescent rolls

    3/4 cup milk

    1 can cream of chicken soup

    Combine soup and milk.  Pour into a 9 x 13 baking dish.  Mix chicken with 1/2 cup cheese.  Put chicken mixture in center of each crescent and roll up the crescent and place onto the soup mixture.  Bake at 350 for 25 minutes or till golden brown.  Then top crescents with the remaining cheese and bake 5 minutes or until the cheese is melted.  We love cheese in this family, so I use a little more cheese then this recipe calls for.

    Macaroni Salad With Olives  (My daughters love this) Kiss

    From kmenurse

    Ingredients

    16 oz. macaroni

    1 stock celery

    3 radishes

    1/2 green pepper

    1/4 cup chopped onion

    8 oz. salad olives

    1 (12 oz.) can tuna, packed in water

    Dressing

    2 cups salad dressing ( Miracle Whip)

    1 tsp. yellow mustard

    2 tsp. sugar

    2 tsp. cider vinegar

    3 Tbsp. milk to thin

    OR as my mom did it, just use Miracle Whip

    Salt, pepper and season salt to taste

    Directions

    Cook pasta to al’dente.  Chop all vegetable, to desired size.  Add to pasta.  Mix dressing ingredients together.  Pour over salad and mix.  I like my salad a little dryer then most people, so adjust dressing as desired.

    This is my recipe Jennifer I use to make all the time

     

    Microwave Carmel Corn

    From Kathy’s Kitchen

    Ingredients

    1 C. brown sugar

    1 stick oleo

    ¼ C. white corn syrup

    ½ tsp. Salt

    ½ tsp. baking soda

    3 - 4 quarts of (popped) popcorn I use an air popper.

    Directions

    Combine all ingredients except soda and popcorn in 1 ½ quart bowl.

    Cook in microwave on high  2 min. stir in soda.  Put popcorn in a brown paper bag, pour syrup over popcorn, close and shake.  Cook in bag on high, for 1 ½ min. repeat once or twice after shaking as needed.  Pour into pan and cool.

    DIABETIC FRIENDLY STRAWBERRY PIE

    4 cups fresh strawberries
    1 (6-ounce) graham cracker crust
    1 (4-ounce) package JELL-O® Vanilla Sugar-Free Cook & Serve Pudding
    1 (4-ounce) package JELL-O® Strawberry Sugar-Free Gelatin
    1 ½ cups water
    1 cup Reduced-Calorie or Fat-Free Cool Whip
    ½ tsp. vanilla extract (optional)

    Arrange strawberries in pie crust. In large saucepan, combine dry pudding mix
    dry gelatin and water. Cook over medium heat until mixture thickens and starts
    to boil. Stir often. Spoon hot sauce over strawberries. Refrigerate at least 2
    hours. Mix topping and vanilla and cover pie evenly.

    Thanks for posting this recipe again.  I bought some popcorn awhile back, but, forgot how I was suppose to fix it in the microwave.  Cancerbrain!  LOL

    1/2 cup butter

    2 cups sugar

    1/2 cup milk

    4 tbsp. cocoa

    1/2 cup peanut butter

    3 1/2 cups quick cooking oats

    2 tsp. vanilla

    Add the first 4 ingredients in a saucepan.  Bring to a roiling boil, and, boil for 1 minute.  Stir in the net 3 ingredients and drop onto wax/foil paper.  Let cool until set. 

     

    My Mom has made these for years!  Laughing
