Hi there. I don't know how "healthy" this is because it does hve sugar in it.. but I just read a good book "Apron Anxiety" which I really enjoyed, but maybe not for anyone. Anyhow there's a recipe for dressing which is just 3 ingredients... and sounds really good, haven't tried it yet.
it's a 1 to 1 to 1 ration
1/3 cup EVOO
1/3 cup white vinegar
1/3 cup sugar
You're supposed to mix it up and use same day.... let me know if you try it..

Balsamic vinegar on its own does the job.

EVOO= Extra virgin olive oil.....

recipe called Spicy Mustard Dressing. The recipe says it's four servings but I sometimes use the whole thing on a salad for myself.
1/2 tsp Dijon mustard
1 1/2 Tbsp rice vinegar (I prefer seasoned)
1 Tbsp water
2 tsp olive oil
1/2 clove finely minced garlic (I use granulated to taste)
I have loved this dressing since 1983.
