We have done this before and got amazing and delicious recipes that we are still enjoying.

Let's do it again..share those recipes and any tips you might have for cooking.

Loved Linda's popcorn idea in the microwave.

I think this is called Shepherd's Pie.  Sometimes when I make a meatloaf, I put the mashed potatoes on the top of the meatloaf and put it in the oven to really warm up and then I put just sliced American cheese on top of that and let it just barely melt.  You can do this if you make the meatloaf in a muffin pan too.

Loaded Potato and Buffalo Chicken Casserole:

2 pounds boneless chicken breasts, cubed (1")
8-10 medium potatoes, cut in 1/2" cubes
1/3 cup olive oil
1&1/2 tsp salt
1 Tbsp. black pepper
1 Tbsp. paprika
2 Tbsp. garlic powder
6 Tbsp. hot sauce

Topping:
2 cups fiesta blend cheese
1 cup crumbled bacon
1 cup diced green onion

Preheat oven to 500 degrees. Spray a 9X13" baking dish with cooking spray. In a large bowl mix together the olive oil, salt, pepper, paprika, garlic powder and hot sauce. Add the cubed potatoes and stir to coat. Carefully scoop the potatoes into the prepared baking dish, leaving behind as much of the olive oil/hot sauce mixture as possible. Bake the potatoes for 45-50 minutes, stirring every 10-15 minutes, until cooked through and crispy and browned on the outside. While the potatoes are cooking, add the cubed chicken to the bowl with the left over olive oil/hot sauce mixture and stir to coat. Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400 degrees. Top the cooked potatoes with the raw marinated chicken. In a bowl ix together the cheese, bacon and green onion and top the raw chicken with the cheese mixture. Return the casserole to the oven and bake for 15 minutes or until chicken is cooked through and the topping is bubbly delicious.
Serve with extra hot sauce and/or ranch dressing.

OMG I am sooooooooo making this Kristin.  Is the fiesta cheese like taco cheese though?
 

I am not sure I've seen actual fiesta cheese, but, I've never looked for it either.  lol

Yes, it is pretty much like taco cheese, so, you can use that Leeza.  You will love this!  We did!

Use the least fat content ground beef.  Brown in hot skillet, no fat required.  Add onion, cooked carrots, mushrooms, basically any veg you like.  Add low sodium brown gravy or make from scratch from low salt beef broth thicken only with cornstarch not flour.  Cook meat mixture 15 mins or so.  Top with mash potato sprinkle cheese of choice on top and brown under grill

 

This is the way made back home, original Shepherds Pie was made with Lamb Minced which we don't get here.  Enjoy

Husband on his first day back to work, we got the news I had BC.  He is now super fit, but I wasn't ready to go there and now am (for some unknown reason).  I wrongly thought most good food boring but if clever with spices and herbs etc things can be excellent.

 

Soup

 

Asparagus

 

Lots of asparagus so shouldn't have to thicken much or not at all.

To thicken use barley not flour but Cornstarch

No salt - if you must use salt alternatives

For lighter creamy soups you can use all skimmed milk/or a base adding fat free half and half, just a little.  The base I use would be partially low salt chicken or beef broth, also pure carrot juice works, not much as this kills other ingredient flavours.

Simmer doesn't take long. Use a soup blender, these are not expensive takes a minute to blend down lovely and smooth

 

If you like a little sweetness add a few tinned asparagus hearts

Boil leeks until just cooked and add all natural, unsweetened apple sauce at end.  Tastes really good as veg side

Cellery, carrot, leeks, barley, any beans you like, turnip, spinnach, onion.  Sweeten to taste with a little carrot juice or unsweetened apple sauce.  Simmer away.  Use low sodium beef or chicken broth.  Shouldn't need to thicken but if you need to a little cornstarch not flour.  Add your favorite herbs to taste, plenty of pepper.

Do not eat any cereals sugared (sorry)

 

one of the best cereals is original shredded wheat with fat free milk and wonderful sweetener just chopped banana.

1 lb chicken, cooked and chopped ( I used 2 cups )

1 cup shredded cheddar cheese

8 crescent rolls

3/4 cup milk

1 can cream of chicken soup

Combine soup and milk.  Pour into a 9 x 13 baking dish.  Mix chicken with 1/2 cup cheese.  Put chicken mixture in center of each crescent and roll up the crescent and place onto the soup mixture.  Bake at 350 for 25 minutes or till golden brown.  Then top crescents with the remaining cheese and bake 5 minutes or until the cheese is melted.  We love cheese in this family, so I use a little more cheese then this recipe calls for.

Macaroni Salad With Olives  (My daughters love this) Kiss

Ingredients

16 oz. macaroni

1 stock celery

3 radishes

1/2 green pepper

1/4 cup chopped onion

8 oz. salad olives

1 (12 oz.) can tuna, packed in water

Dressing

2 cups salad dressing ( Miracle Whip)

1 tsp. yellow mustard

2 tsp. sugar

2 tsp. cider vinegar

3 Tbsp. milk to thin

OR as my mom did it, just use Miracle Whip

Salt, pepper and season salt to taste

Directions

Cook pasta to al’dente.  Chop all vegetable, to desired size.  Add to pasta.  Mix dressing ingredients together.  Pour over salad and mix.  I like my salad a little dryer then most people, so adjust dressing as desired.

This is my recipe Jennifer I use to make all the time

 

Microwave Carmel Corn

From Kathy’s Kitchen

Ingredients

1 C. brown sugar

1 stick oleo

¼ C. white corn syrup

½ tsp. Salt

½ tsp. baking soda

3 - 4 quarts of (popped) popcorn I use an air popper.

Directions

Combine all ingredients except soda and popcorn in 1 ½ quart bowl.

Cook in microwave on high  2 min. stir in soda.  Put popcorn in a brown paper bag, pour syrup over popcorn, close and shake.  Cook in bag on high, for 1 ½ min. repeat once or twice after shaking as needed.  Pour into pan and cool.

Instead of buying microwave popcorn bags, you can make your own. Take a brown paper bag (the old fashioned kind like you used to use for lunch). And two small handfuls of popcorn, no oil, and tape closed. Regular scotch tape works. Use the regular popcorn setting on your microwave, or listen for it to stop popping for 3-5 seconds. Open carefully, it's hot and steamy. Add your own toppings and enjoy!

DIABETIC FRIENDLY STRAWBERRY PIE

4 cups fresh strawberries
1 (6-ounce) graham cracker crust
1 (4-ounce) package JELL-O® Vanilla Sugar-Free Cook & Serve Pudding
1 (4-ounce) package JELL-O® Strawberry Sugar-Free Gelatin
1 ½ cups water
1 cup Reduced-Calorie or Fat-Free Cool Whip
½ tsp. vanilla extract (optional)

Arrange strawberries in pie crust. In large saucepan, combine dry pudding mix
dry gelatin and water. Cook over medium heat until mixture thickens and starts
to boil. Stir often. Spoon hot sauce over strawberries. Refrigerate at least 2
hours. Mix topping and vanilla and cover pie evenly.

Love strawberry pie, so, I will try your recipe kmenurse, especially now that the stores do have the fresh strawberries.  Caramel popcorn, love it and so easy to make.

1/2 cup butter

2 cups sugar

1/2 cup milk

4 tbsp. cocoa

1/2 cup peanut butter

3 1/2 cups quick cooking oats

2 tsp. vanilla

Add the first 4 ingredients in a saucepan.  Bring to a roiling boil, and, boil for 1 minute.  Stir in the net 3 ingredients and drop onto wax/foil paper.  Let cool until set.

 Strawberry Pie


Pre-baked pie shelled - cooled
2 cups sliced fresh strawberries
3 oz box Srawberry Jello
1 1/2 cup water
1 cup sugar
3 tablespoons cornstarch


Line the bottom of the shell with sliced strawberries. Combine cornstarch, sugar and water in a small saucepan and bring to a boil an simmer, stirring constantly until thickened. Add the Jello and stir until dissolved. Pour over strawberries and refrigerate until set - serve with whipped cream topping.

Hawaiian Dessert


• 1 package yellow cake mix (regular size)
• 3 packages (3.4 ounces each) instant vanilla pudding mix
• 4 cups cold milk
• 1-1/2 teaspoons coconut extract
• 1 package (8 ounces) cream cheese, softened
• 1 can (20 ounces) DOLE® Crushed Pineapple in 100% Pineapple Juice, well drained
• 2 cups heavy whipping cream, whipped and sweetened
• 2 cups flaked coconut, toasted
Directions
• Mix cake batter according to package directions. Pour into two greased 13-in. x 9-in. baking pans. Bake at 350° for 15 minutes or until the cakes test done. Cool completely.
• In a large bowl, combine pudding mixes, milk and coconut extract; beat for 2 minutes. Add the cream cheese and beat well. Stir in pineapple.
• Spread over the cooled cakes. Top with whipped cream; sprinkle with coconut. Chill for at least 2 hours.

 5 MINUTE FUDGE
 
Ingredients
1 2/3 cups white sugar
2/3 cup evaporated milk
1 tablespoon unsalted butter
1/2 teaspoon salt
1 (6 ounce) packages milk chocolate chips
16 large marshmallows
1 teaspoon pure vanilla extract
1 cup chopped nuts


Directions
1.Combine sugar, milk, butter and salt in a medium sized saucepan. Bring to a boil, cook 5 minutes, stirring constantly.
2.Add in chocolate chips; cook until melted.
3.Remove from heat; stir in marshmallows, vanilla and nuts. Mix well.
4.Pour into a 8-inch pan.
Cool cut into squares.

OMG Fudge!  YUM!  Noel, every time I log on, I always get a new recipe from here and print it off.  I don't know if I will ever make all of them, but, I have made some and loved them. 

I hope everyone continues to post new ones on here.  It's like our own little CSN cookbook!
