How about sharing some fun summer recipes?
Here is a cobbler that I made for the first time last night. The guys really loved it. I used about 1 cup fresh fat Mississippi blueberries and 1 cup fresh Georgia peaches. It was so easy too! Also, I added a pinch of cinammon to the sugar topping mixture and a dash of vanilla and a little cinammon to the batter.

Easy Batter Fruit Cobbler from USA WEEKEND columnist Pam Anderson

4 tablespoons butter
3/4 cup all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
2 cups of sliced fresh peaches or nectarines, or whole blueberries, strawberries, raspberries, blackberries or a combination of fruits (or a 12-ounce package of frozen berries)
1 tablespoon sugar

Directions
1.Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
2.Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
3.Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
4.Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

I would use whatever fresh local fruit that you can get your hands on. Hope you enjoy it as much as my family did!

    It's all about the tomatoes
    I live a few blocks from a community college with its own farm -- in the summer, it's all about their tomatoes.

    I make these sandwiches, "Mama's Best Broiled Tomato Sandwiches," from allrecipes.com, all summer long. I grow my own basil and oregano on my balcony, so I use those instead of the dried herbs called for. I also add a small clove of garlic to the mayonnaise mixture.

    If science ever discovers that it's possible to overdose on lycopene, I will be really #$%^&ed!

    Mama's Best Broiled Tomato Sandwich

    Ingredients:

    2 tablespoons olive oil
    2 tablespoons balsamic vinegar
    4 ripe tomatoes, sliced
    3 tablespoons mayonnaise
    1/2 teaspoon dried parsley
    1/4 teaspoon dried oregano
    1/4 teaspoon black pepper
    3 tablespoons grated Parmesan cheese, divided
    4 slices bread, lightly toasted

    Directions:

    Preheat oven to broil.

    In a shallow bowl, whisk together the olive oil and vinegar. Marinate the tomatoes in the mixture, stirring occasionally.

    Meanwhile, in a small bowl, combine mayonnaise, parsley, oregano, black pepper and 4 teaspoons Parmesan cheese. Spread mixture on each slice of toasted bread. Place marinated tomatoes on 2 slices and sprinkle with remaining Parmesan cheese.

    Place on a baking sheet and broil for 5 minutes, or until cheese turns golden brown. Serve immediately, open faced or closed.

    Easy 3 ingredients
    This is one of my favorite go to recipes.

    One graham cracker pie crust
    One 1/2 gallon sherbet (raspberry is my favorite)
    One tub cool whip

    Let the sherbet soften, mix with the cool whip, fill the pie crust and freeze.

    Easy peazy.

    This is one of my favorite go to recipes.

    My favorite salad
    1 medium head romaine lettuce, washed and cut into bite size pieces
    1 small red onion, sliced thin
    1/2 bulb fennel, sliced thin
    1 fresh orange, peeled and cut up
    1/4 cup chopped pecans
    1/4 cup feta cheese

    Toss all together, and dress with raspberry vinegarette. Add croutons, if desired.

    I made this salad last night, and there was one serving left over. I added in a chopped hard cooked egg, and that was my dinner.

    Cucumber-Tomato Salad
    Here's another one you can use those wonderful summer tomatoes for:

    1 large cucumber, diced
    3-4 tomatoes, diced (so that it's about equal in volume with the cucumber)
    2 T fresh parsley, chopped fine
    3 scallions, chopped fine
    3-4 T fresh basil, chopped fine
    2 oz. Feta cheese, crumbled

    Mix all together and add just a splash of Italian Dressing (we use Ken's)

    Yummy!

    Those sound perefect for summer. My mouth is watering! And we have great creole tomatoes right now. Yum!

    Okay, I didn't see any requirement that "healthy" had to be a part of our receipe.....this is a "salad" after all. I can guarantee you smiles especially if you like caramel apples. So, here goes:

    1 - 8 oz. package cream cheese at room temperature
    1 - 8 oz. container of frozen non-dairy whipped topping, thawed
    3/4 cup brown sugar
    3 apples, any kind, chopped
    3 large Snicker bars, chopped

    Combine cream cheese, whipped topping and sugar until thoroughly mixed. Add apples and Snicker bars to cream cheese mixture, mix thoroughly. Eat. Smile.

    Cheese Potato Soup And Ham
    10 medium potatoes
    1 can cream of chicken soup
    1/2 pound velveeta cheese
    2 cups diced ham
    1 can cream of celery soup
    16 ounces sour cream
    2 medium onions

    Peel and dice potatoes, chop onion. Cover with water and simmer till tender. Do not drain!

    Add soups, sour cream, velveeta cheese and ham. Simmer 15 minutes.

    This is so good..not really a cool summer dish, but, I hope you like it!

    Spinach Blueberry Salad


    Serves: 8

    Salad
    1 bag baby spinach leaves
    1 pint fresh blueberries
    1 cup finely chopped walnuts, toasted (microwave for 30-60 seconds to toast)
    1 cup grated Jack cheese

    Dressing
    ½ cup vegetable oil
    3 tablespoons raspberry vinegar
    1 tablespoon Dijon mustard
    1 tablespoon sugar

    Layer salad ingredients in bowl
    Stir dressing together and pour over salad just before serving
    Toss well and enjoy

    Yes, that's right, Traci!!
    Yes, that's right, Traci!! I agree it does sound obscene but it is really very good and it does have "salad" in its name. Doesn't that count?

    Now that MyTurnNow's posted that Snicker Sugar Coma In A Bowl (I refuse to call it a salad), nobody's looking at her very healthy salad down here.

    Heidi, can we add some Cool-Whip and Snickers bars to your salad? I'm certain I've read somewhere that they're proven cancer fighters!

    3/4 cup packed brn sugar
    1/4 cup crisco/ or softened unsalted butter
    1 tsp vanilla
    1 large egg

    1 cup sweetened coconut
    1 cup flour
    3/4 tsp baking powder
    1/8 tsp salt


    2 oz chopped dark chocolate (optional)
    or
    3/4 cup chopped walnuts (optional)

    Cream first 4 ingredients; add remaining ingredients until blended; drop by tblsp on baking sheet coated with cooking spray . Bake in preheated 350 oven for 10 min or until bottoms of cookies begin to brown. 88 calories each with the choc, not sure of calorie content with the nuts. Yummy and low cal cookie.
