I've been craving lots of foods right.. who does not? with this diet!!

I was craving Chicken Kitchen an this how I got as closed as I could and still being faithful to the diet

Mexican Chop Chop

Yellow Rice, Lettuce, tomatoes, Guacamole, chicken, Sour Cream and cheese of course were avoided.

Lettuce and tomatoes you can find at your local grocery stores, so far we are good.
Guacamole: Follow the low iodine cookbook, they had a recipe for that but I used instead of Roma Tomatoes, the green tomatoes called "Tomatillo" these are the ones mexican people really use but you can do what you want. I bought them at Publix.

Yellow Rice you need:

2 cups of rice
2 1/2 cups of water
Dice some red bell peppers
1 small can of unsalted corn
Seasonings:
Black pepper
Salt ( without the iodine!!!)
Oregano
Annato seed ( This is used to give color to the rice)
A bit of Paprika
A bit of Red pepper
A pinch of nutmeg
A bit of cilantro
Curry powder ( keep adding until you see it gets a yellow color.. but not too yellow! ;-)

The seasonings you can add less or more depending on how do you like it ;-)

Let everything go to a boil and then cook in a low heat until water is all absorbed.

For the chicken, just seasoned to taste and fried it. I used thighs, but it is preferable chicken breast since that is what they used. But with thighs I just cut the meat in pieces after I fried them.

When rice is fluffy, serve the rice in a bowl style plate and then on top you can add the fresh lettuce, tomatoes,guacamole, the chicken and Bon Apetit!! It was really good!! at least for me lol

I really enjoyed it.. full of flavor and very similar in flavor to the Chicken Kitchen Mexican Chop Chop!

Hello fintia, I'm new at this page and I'm new with everything (just diagnosed, op, and soon to have radio iodine therapy) and craving for something like that ... sounds yummmy I'll try the recipe = ) thanks

Hello fintia...2days later I'd posted to you had my first RAI and as you can imagine have been isolated (I live with my parents and because of that still kind of afraid of getting out of my room so much), my mom is the one that's cooking for me I just gave her the recipe and promised she'll try it.

Right now I'm feeling sick (not lots but still...I've been nauseous and the taste on my mouth have change...it taste like sort metal thing)...to tell you more I can't stand anymore the sour candy (BTW I always loved candies...LOL) but I'm hanging there...fighting...and over all POSITIVE....Thanks a lot : )

HANG IN THERE!!!! It's gonna pass!! The metal taste, yes, it's normal and I had it for around 2 weeks.. so that sucks big time!!!! but it'll pass.. you are strong, so keep it up!

Hopefully your mom makes the recipe!! hehe

Hi Fintia...I forgot to tell youuuu days later than my post my mom made me your chicken recipe...mmmm mmm mmm ...THANKSSSSSSS it is great. I'm trying my best to keep it up...but I can't lie, it's been like a roller coaster (emotionally and physical) but still here, still strong...thanks for that 2. How are U???

Glad to hear she made it!!! I know how it is.. that's how I call it too a roller coaster. I am good but my body scan showed something weird in the liver, then I got a CT Scan done and it showed that I have 2 things in there 4cm size so this coming Friday I am getting a MRA to know what it is.. Doctor says it can not be cancer becasue this type of cancer moves slowly and when it moves, it goes to the lungs first and my lungs are fine so.. I don't know.. well see.. I'm just worried about a possible surgery.. even if its not cancerous but can not be in my liver either.. you know.. I had a 2nd thyroid surgery on March so I really do not want another surgery.. so.. On Monday I'll get my results.. take care!!!

Hello fintia, by the time you read this, you'll have your results of your MRA. Hope everythings with your liver will be fine. I know how it feels to be worry about having another surgery. But remember the same way you once told me..."you are strong". No matter what you'll get thru this. BTW I added you to my friend list. I'll keep you in my prayers. HANG IN THERE : )

There was a mistake with my paper work and I could not get the test done.. I am getting the test today and next Monday will have the results.. so I'll have to wait a bit longer to know.. take care!

Wow, that sounds great, thanks! I had alot of different cravings since this happened to me. I, for one, never ate chocolate, I know, I am abnormal. However, after the RAI, I wanted items with strong flavor and somehow I got into chocolate. Bad but SO GOOD. Also, what is this about the low iodine diet. I have been to different doctors and none of them told me that I should be on a low iodine diet. I do not even know what a low iodine diet is.
HUH?

Hello itsme4u...U should really try this recipe It's great. I don't know how you've been thru RAI without having a low iodine diet (cause I'm not an expert but as I understand you should do the diet 20 days before going under RAI). Besides, when you say about needing items with strong flavor after treatment I Do Know how it is...I've been there...still there = )

WOW-I do not believe this. I should have been on a low iodine diet before the RAI? Wow--I was never told that, went through surgery then RAI and then a scan. Never told or mentioned in 2 years anything about this from any of the doctors I have seen. Maybe that is why my blood levels are not normal. I just did a ultrasound last week and I am doing the injections this week. I will mention to the doc about the diet. I am so surprised, really, I do not believe this. I got this from a mexican chop chop receipe-haha

As I told you before It's new for me that somebody have been thru RAI without the LID. You can download/print the cookbook on the site I told you before. And of course, I understand every patient can have variants with their thyca...but most important you need to consult your doctors.

And believe me it's a great recipe.

Yep, I really do not know too much about this. As you can tell, I have been avoiding research and trying to concentrate on other things. Had a horrible experience with my first two doctors. 1st doc had a nurse call me on my cell to tell my I had Thyca and the 2nd doctor told me to see my primary when I started having heart palputations, anxiousness, sweating after being on Synthroid for over 1 year. As 3 docotrs complied, my dosage was too high. Thanks again for the munchee receipe :)

U R welcome...to bad to hear you had bad experiences with doctors...BTW I'm Lilypr and Fintia is the one that gave us the recipe (just for the record, the recipe is fintia's...din't want to take any credit for her fine recipe)...keep it up!!
