    Oh boy.......Hmmmmm my fav pizza huh ? I love pizza with stuffed crust, little sauce and peppers, onions, mushrooms and cheese. Oh boy now I want pizza but I made a pot of spaghettiiiiiii and meatballs instead. Garlic toast too..........

    We always avoided the stuffed crust pizza's as we didn't think we'd like them.  We were at some friends house the other day and that is what they ordered and guess what, we loved it!  lol

    pizza...zucchini pizza bites

    I came across a recipie that used zucchini as the base of the pizza...and add toppings as usual....a good idea for someone cutting back on carbs...

    Zucchini?  That would be a

    Zucchini?  That would be a strange crust, but, a good idea, like you said if someone is cutting back on carbs. How did the recipe say you make a crust with it?

    zucchini pizza...enjoy -

    A zucchini base makes an interesting and great tasting crust for this pizza.

    Ingredients:

    • 3 cups shredded zucchini
    • 3 eggs, well beaten
    • 1/2 cup flour
    • salt to taste
    • 2 1/2 cups shredded mozzarella cheese
    • 1/2 cup chopped black olives
    • 1/2 cup finely chopped green onions
    • 1/2 cup chopped marinated artichoke hearts
    • 1 tablespoon fresh oregano or 1 teaspoon dried oregano
    • 1 1/2 teaspoons fresh basil or 1/2 teaspoon dried basil
    • 3 to 4 small tomatoes, thinly sliced
    • salt and pepper, to taste


    Preparation:

    Generously butter a 9x13-inch baking pan. Preheat oven to 450°. Put grated zucchini in a colandar and press out as much excess liquid as possible. Put zucchini in a mixing bowl. Add well-beaten eggs, flour and salt. Mix well and spread in buttered pan. Bake in a 450° oven for 8 minutes. Remove pan and reduce oven temperature to 350°. Cover the zucchini base with cheese. Combine ripe olives, onion, and artichoke hearts. Spread over cheese. Sprinkle with fresh or dried herbs. Arrange tomatoes on top. Sprinkle with salt and pepper. Bake at 350°, uncovered, for 25 minutes.

    zucc pizza

    I did like it - just be careful to get as much moisture out of the zucchini as possible - I'm a vegetarian, so I'm always looking for ways to make things healthier...I've also used zucchini's for making 'mini pizza's'...cut slices about an 1/4 - 1/2 inch thick - add sauce and cheese to the tops - bake until tender and brown...these are good to cook on the grill too...

    Our grandkids love mini pizzas.  I am going to make these Andi.  Thanks for the recipe!

    We had one of those cheese

    We had one of those cheese stuffed crusts pizzas and I didn't like it.  It just wasn't good.  Guess we just like a nice crust and without a bunch of cheese stuffed in it.

    Pizza Hut has those Kylez and

    Pizza Hut has those Kylez and we don't care for them either.  Tried it once and once only.  lol
