OT - Soup Recipes

It's COLD in many areas now and will be for some time.  SO - what do you make?

Right now I have  cream of leek soup on the stove.

    Sorry, I am not a domestic goddess.  For me soup is usualy open a can....a do make a pretty good turkey chili in the crock pot though.

    Good idea, I will come back and check for some recipies.

    Chicken (Veggie) Noodle Soup

    OK, I have a really simple chicken vegetable soup recipe that kids love (they just think it's noodle soup) and my family and friends still beg me to make.  A friend from Upstate NY created it.   I make the soup in a very large soup pot and my ingredients often change.

    4 boxes chicken broth

    5 large cans white chicken meat (or chicken meat that you have on hand)

    1 small bag mixed frozen vegetables

    1 can original Rotel (gives it a little zing)

    Small bag of seasoning mix (chopped onion, celery, parsley, etc.)

    1 can tomato paste

    1 can chopped tomotoes

    10 (or more) ounces extra wide noodles

     

    Just throw all of the above ingredients together in the large pot.  Bring to a boil and then simmer for a 2-3 hours.  At the last 30 minutes, throw in about 10 ounces of extra wide noodles.  You can add different veggies and I rarely make it the same way twice.  It freezes really great and I take baggies of the stuff to sick friends and they love it.  So simple.  And I only share it with my closest friends Wink.  The key, I think, is that can of Rotel.  It does not come out spicey hot, just a little spicey.  If you want hotter, use the Rotel Hot.

    I used to enjoy Campbells

    I used to enjoy Campbells too, but with the BPA in the can lining leaking estrogen-mimicking chemicals in their soups, I avoid Campbells now.  There are soups with no BPA and I use them now.  I still do occasionally use canned products, but I pick and choose now.

    If your tumor isn't estrogen receptor positive, go for it.

    Taco Soup

    DO NOT DRAIN SOUP FROM CANS!!

    2 LBS. HAMBURGER (I ONLY USE 1 POUND AND IF YOU DON'T WANT THE BEEF, YOU COULD USE CHICKEN OR TURKEY I BET. OR GO WITHOUT ANY MEAT IN IT)

    1 CAN RANCH STYLE BEANS

    1 CAN PINTO BEANS

    1 CAN DICED TOMATOES (I LIKE MORE TOMATOES SO I PUT IN AT LEAST TWO CANS.)
    1 CAN DICED MEXICAN STYLE TOMATOES
    1 ENVELOPE RANCH DRESSING
    TWO CANS OF CORN
    1/2 PACKAGE TACO SEASONING

    COMBINE ALL INGREDIENTS
    BRING TO A BOIL AND SIMMER FOR 15 MINUTES
    SERVE ON TOP OF CORN CHIPS, TOP WITH WHAT YOU LIKE...LETTUCE, ONION, TOMATOES, SOUR CREAM, SHREDDED CHEESE, BLACK OLIVES, HOT SAUCE...WHAT EVER YOU LIKE.
    THIS SOUP IS REALLY YUMMY. I WAS SURPRISED ABOUT THE RANCH DRESSING IN IT, BUT YOU CAN'T EVEN TELLLL!!
