    This is a recipe for a Holiday Brunch Casserole

    The ingredients are:

    4 cups frozen shredded hash brown potatoes
    1 pound bulk pork sausage, cooked and drained
    1/2 pound bacon strips, cooked and crumbled
    1 medium green pepper, chopped
    2 cups (8 ounces) shredded cheddar cheese, divided
    1 green onion, chopped
    1 cup reduced-fat biscuit/baking mix
    1/2 teaspoon salt
    4 eggs
    3 cups 2% milk

    The directions are:

    In a large bowl, combine the hash browns, sausage, bacon, green pepper, 1 cup cheese and onion. Transfer to a greased 13-in. x 9-in. baking dish.
    In another bowl, whisk the biscuit mix, salt, eggs and milk; pour over the top. Sprinkle with remaining cheese. Cover and refrigerate overnight.
    Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 375° for 30-35 minutes or a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

    Old fashioned chocolate fudge - My hubby's favorite


    1 1/2 cups whole milk
    4 oz. unsweetened baking chocolate (squares)
    4 cups sugar
    3 Tbsp. light corn syrup
    1/4 teaspoon salt
    3 Tbsp. butter or margarine
    1 1/2 teaspoon vanilla



    1. Combine milk and chocolate in medium-size heavy saucepan; cook over low heat until chocolate is melted. Add sugar, corn syrup and salt and cook, stirring constantly, to boiling.

    2. Cook, without stirring to 234 degrees F on a candy thermometer. (A teaspoonful of syrup will form a soft ball when dropped into cold water.) Remove from heat at once. Add vanilla and butter or margarine, but do not stir in.

    3. Cool mixture in pan until lukewarm; beat with wooden spoon until mixture thickens and begins to lose its gloss. (This will take about 15 minutes.)

    4. Spread in a buttered 8x8x2" pan. Let stand until set and cool; cut into squares. Makes about 2 pounds

    I have a funny story about
    I have a funny story about fudge. When my hubby and I were first married, we used to "try" to make fudge like this and I don't know how many pans we had to literally throw away because the fudge got too hard in the pan and we couldn't get it out. LOL

    We have since learned how to make it and we both love it, especially at Christmas time. Thanks for the reminder Leeza.

    Cranberry Ice
    For as long as I can remember, my grandmother made cranberry ice for holiday dinners, whether for Thanksgiving or Christmas because we'd have turkey at both. (To give you an idea of how old this tradition was, my grandmother was born in 1901.) She would only make enough to fill two of those old metal ice cube trays that had the insert you could pull out. My siblings, my cousins, and I thought Grandma never made enough.

    Believe it or not, ask my siblings and ask my cousins if THEY make cranberry ice, and they will tell you they do. Making cranberry ice for the holiday meal is evidence that we were, and are, Ashleys (whether or not our last names have changed because of marriage.)

    Here is the recipe:

    12 oz. whole cranberries
    2 c. water
    Cook the cranberries in the water until they soften. Strain the mixture through a sieve. Let this cool for awhile.

    1 3/4 (1.75) c. water
    1 3/4 (1.75) c. sugar
    Cook at rolling boil for five minutes. Let cool.

    Combine the cranberry mixture with the water/sugar mixture.
    Add 1/2 T. lemon juice

    FREEZE.
    When the mixture is not quite hard, whip it thoroughly to a pink froth. (If it's not pink, refreeze it and whip it again when it gets a little harder.

    REFREEZE.

    Serve in small dishes as an appetizer or a complement to the meal.

    You can put in refrigerator and reheat if you're not eating them right away or they can be frozen by layering them and flash freezing them before putting them in freezer bags.

    another way to eat reheat them...
    I fry them in butter until they are warmed thru or even until they are a little crispy. When they are fresh I like to use Miracle Whip as a dip on them. My mother used to use cottage cheese to stuff and some times ground beef as my dad wanted meat. Thank you for the good memory from my past. Diana

    I am not a christmas person,
    I am not a christmas person, and even less so this year with all thats going on..

    BUTTTTTTTTTTT :):):) , what I LOVE LOVE LOVE about this time of year is

    CHRISTMAS COOKIES AND CANDY!! Mmmmmmm I dont really make much, and wait for kind souls to bring me some, and they are always the BEST sweet treats of the year.

    So seeing this thread and findind some of my favorites, I just may try a few, and indulge myself.

    Most loving the snowball cookies, the crock pot candy, and the magic cookie bars.

    Any more easy cookie recipes, greatly appreciated. I have never made any of these recipes, just waited for people to bring me some.

    Anyone know how to make those ones that are like a peanut butter cookie, with a Hersheys Kiss stuck in the middle of it?

    Peppermint flavorings, optional (use about 2 teaspoons, to your taste)

    Place candy canes in a plastic bag and hammer into 1/4-inch chunks or smaller.

    Melt the chocolate in a double boiler.

    Combine candy cane chunks with chocolate (add peppermint flavoring at this point if desired.). Pour mixture onto a cookie sheet layered with parchment or waxed paper and place in the refrigerator for 45 minutes or until firm.

    Hubby and I have been doing some baking and we made these magic cookie bars today. Actually, I made them and he kept eating them. lol They are good and so easy.

    And, our fudge turned out perfect this time! I didn't have to throw the pan away. lol
