    Crock Pot Candy
1 one lb jar lightly salted dry roasted peanuts
1 one lb jar unsalted dry roasted peanuts
    1 12oz bag semi-sweet chocolate chips
1 12oz bag white chocolate chips
1 one lb pkg vanilla or almond bark

Dump it all into your crock pot and set on low for one hour. No need to stir. Spoon by teaspoon onto waxed paper. If you throw in some raisins and pecans instead of peanuts, it tastes like a chunky. Experiment!

    Snowball Cookies
    1 cup butter
    1/2 cup confectioners' sugar
    1/4 teaspoon salt
    1 teaspoon vanilla extract
    2 1/4 cups all-purpose flour
    1 cup chopped pecans
1/3 cup confectioners' sugar for decoration

    Directions:

    1. Preheat oven to 350 degrees.

    2. Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, nuts and salt.

    3. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.

    4. Bake at 350 degrees for 15 minutes. Do not allow these cookies to get too brown. It's better to undercook them than to overcook them.

    5. While cookies are still hot roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

Springles, Pferrernuse and Stollen. (Spelling may be wrong). Years ago my springle molds were lost in a flood in the desert along with. The recipes from my G-Grandmother. Over the years I've seen a few recipes for all of them but they weren't quite 'right' for pferrernuse or stollen. I never tried the Springle recipes because the molds were gone but I recently found some so though it's too late for this year will try next year.

OH yeah - just thought of another recipe that was lost - Bourbon soaked WHITE fruit cake - anyone have one for it?

    Cranberry Ice
For as long as I can remember, my grandmother made cranberry ice for holiday dinners, whether for Thanksgiving or Christmas because we'd have turkey at both. (To give you an idea of how old this tradition was, my grandmother was born in 1901.) She would only make enough to fill two of those old metal ice cube trays that had the insert you could pull out. My siblings, my cousins, and I thought Grandma never made enough.

Believe it or not, ask my siblings and ask my cousins if THEY make cranberry ice, and they will tell you they do. Making cranberry ice for the holiday meal is evidence that we were, and are, Ashleys (whether or not our last names have changed because of marriage.)

    Here is the recipe:

    12 oz. whole cranberries
    2 c. water
Cook the cranberries in the water until they soften. Strain the mixture through a sieve. Let this cool for awhile.

    1 3/4 (1.75) c. water
    1 3/4 (1.75) c. sugar
Cook at rolling boil for five minutes. Let cool.

Combine the cranberry mixture with the water/sugar mixture.
    Add 1/2 T. lemon juice

    FREEZE.
When the mixture is not quite hard, whip it thoroughly to a pink froth. (If it's not pink, refreeze it and whip it again when it gets a little harder.

    REFREEZE.

Serve in small dishes as an appetizer or a complement to the meal.

    Home Made Pierogi
    Dough:
Melt 1/2c butter in 1c milk, remove from heat. Then, add 2 eggs and whip then let cool.
Mix in 4 c flour, 1tsp salt in a separate bowl. Mix 1 or 2c flour mixture into milk mixture
alternating until all flour and milk mixture are together. "KNEAD" Slightly.
Keep in saran wrap and then cover with towel.

    Potatoe Mixture:
Peel and cut potatoes, boil until soft, drain water. Mash potatoes add cheese(until taste
    is cheesy) salt to taste

    Formation:
Take 1/4 of dough and roll out (do not roll too thin). Slice dough into squares (as small or large as you like) put a ball of potatoe mixture in the middle, (wet edges w a little water) so they will stick, pinch dough all around and let sit for 10 minutes to dry a little.

Add pierogi to boiling water, allow them to rise to the top and boil until edges of pierogi's are soft.
Drain, layer them over a mixture of melted butter and onions. Keep layering, but not filling the dish (pan) too high.

You can put in refrigerator and reheat if you're not eating them right away or they can be frozen by layering them and flash freezing them before putting them in freezer bags.

    Enjoy!
    Merry Christmas

Any peanut butter cookie recipe will work,
Just make a small ball of dough and push a kiss into it. Also very good with a mini peanut butter cup.
