Baking for Low Iodine Diet

Hello everyone,

I am a pastry chef and a friend of mine has asked me to bake stuff for her while she's on the LID. This is her second time through and she says finding treats is almost impossible. She also wants me to bake her some bread to eat with the peanut butter she makes using the recipe from the ThyCa cookbook. If I'm reading the material correctly, what she basically needs are iodine-free vegan baked goods without specific items such as bananas,strawberries, etc.. Am I correct?

Does anyone here have any suggestions for items I can make for her? Are there foods that are tolerated better than others? Are there non-pastry items I can make for her? Do people on the LID crave certain things such as iodine-free potato chips?

With everything she's dealing with, I really want to make her something that makes her life easier.

Suggestions?

    I suggest that you download the low iodine cookbook at www.thyca.org. That may give you some good ideas I hope. When I was on that diet, my favorite treat was cinamon raison bread made in my breadmaker. I'm sure you can make some yummy treats since you are a pastry chef!

    I think the main thing is to use un-iodinized salt. There may be some iodine in grains and other things, but the BIG culprit is the iodinized salt. And since nearly all prepackaged food has salt in it, there's the problem.

    Please remember, LID stands for "Low Iodine Diet" not "No Iodine Diet". Some Iodine is OK, just avoid the big sources, Iodized salt and seafoods and cut back on the smaller sources.
